Tonight I made my well-loved version of taco Tuesday: plant based chorizo, onion, garlic, cumin, oregano, zucchini, lime and cilantro sauteed together. I roll it up in low-carb tortillas with sour cream, fresh cilantro and serve with quick pickled onions and a topping of Mexican Spicy Lime Crema. I usually make a batch that will fill about a dozen tortillas or I use it for omelet filling, over riced cauli or baked in an individual casserole with Keto ‘cornbread’ topping. It keeps well in the fridge and reheats beautifully. I have riffed on so many of your recipes over the years and have a hard drive full of favorites to fall back on. What I made tonight is a mash up of someone else’s recipe and one of my favorites of yours: crisp beef & balsamic salad with roasted veggies added. Yum! I had to tell you about it because over the time I’ve been making your recipes I’ve learned how to vary what I make to match my ingredients. In this case I had leftover ricotta, which doesn’t freeze well, so the first thing thing that came to mind was crisp beef & balsamic salad. It simplified the meal and made it taste better. Thank you for teaching even old dogs new tricks. And happy, happy birthday!

It’s not on this list, but Single Girl Salmon is still one of my favourite recipes, and I like that I can make substitutions. The other day, I had tinned salmon plus fresh spinach leaves with a bit of olive oil, and a sliced up tomato. Not the same as having the lentils, but very tasty and super healthy!
