Mexican Tofu Magic Meal

One of my best food decisions in recent times has been to start eating tofu again. It’s so fun to have a new super convenient protein option in the mix. Case in point this Mexican Tofu Magic Meal.

Just dice some firm tofu – toss through a little Tajin seasoning (flavour explosion blend of dried lime juice, chilli powder and salt) and you have a seriously delicious protein.

Then the only thing to complete the meal is add some veggies and a drizzle of a tasty sauce like say, sour cream.

And your magic meal is ready before you’ve even had time to think.

Yes you can eat tofu cold – and I love it like this in Summer. But you’re also welcome to warm it up in the air fryer or a frying pan.

Mexican Tofu Magic Meal

No cooking required! Just 4 ingredients!

Ingredients

  • 200 g firm tofu
  • 1 medium cucumber
  • 2 tablespoons sour cream
  • tajin seasoning

Instructions

  • Dice tofu into 1cm (1/2in) cubes. Place in a bowl with a lid. Sprinkle with Tajin seasoning then pop on the lid and shake to coat the tofu in the seasoning.
  • Dice or slice cumber into bite sized pieces and place in a bowl.
  • Top with the seasoned tofu.
  • Drizzle over sour cream. Serve with extra Tajin if you want more flavour.

Variations & Substitutions

no Tajin seasoning – you should order online (its SOO good!) or substitute any commercial seasoning like Everything Bagel Seasoning, Avo Smash Seasoning or Old Bay.

plan-B (pantry) – replace the cucumber with frozen veg like warmed frozen spinach.

different protein – boiled or poached eggs, cooked chicken, cooked sausages, cooked fresh fish, canned fish, canned chickpeas, canned black beans, cooked meatballs.

dairy-free / different sauce – the closest match is to use a dairy-free sour cream like this cashew sauce or hummus or any of those dips you get at the supermarket like hummus or eggplant dip or beet dip or make a tahini sauce with equal parts tahini, lemon juice and water or this macadamia ‘ricotta’.

frozen vegetables – frozen peas, frozen baby green beans, frozen collard frozen kale, frozen cauliflower ‘rice’, frozen broccoli are all great – just cook before using!

different fresh veg – baby spinach, salad leaves, shredded lettuce (any kind), diced tomato, diced zucchini, diced red bell peppers (capsicum), snow peas or sugarsnap peas, kale leaves.

more substantial (carb lovers) – serve with pita or wraps or tortillas or tortilla chips.

more substantial (low carb) – good with a hunk of avocado. And some roast cashews, almonds, walnuts or pine nuts.

more flavour – serve with fresh herbs like coriander (cilantro), mint or basil. Freshly ground black pepper, furikake (Japanese rice seasoning), chilli flakes, grated parmesan, roast cashews, toasted pumpkin seeds.

Waste Avoidance Strategy

tofu – will keep in an unopened packet for a few months (check use by date on packet). Opened packets can be frozen.

cucumber – use for another meal. Will keep in the fridge in a plastic bag for 2 weeks or so.

sour cream – keeps for weeks in the fridge.

tajin seasoning – keep in the pantry.

Can Mexican Tofu Magic Meal be made ahead of time?

Yes! Just prepare as per the recipe. Either keep at room temperature if it’s only a few hours before serving or refrigerate if longer. Then to serve bring back to room temperature or you can eat it chilled.

How long does Mexican Tofu Magic Meal last in the fridge?

Leftovers will keep in an airtight container in the refrigerator for at least a week or can be frozen.

Is Mexican Tofu Magic Meal healthy? Is it good for me?

Absolutely! From a nutrition perspective it contains good quality protein from the tofu.

Is Tofu and Cucumber a good combination?

Yes I LOVE this combo of satisfying spicy, chewy tofu and cool crisp cucumber.

How to cook Mexican Tofu Magic Meal in the air fryer?

Put the diced tofu in the air fryer basket, spray with oil and cook at 200C (400F) for 8-10 minutes. OR until crispy. Then toss in the tajin seasoning.

What do you eat with Mexican Tofu Magic Meal?

This is a fantastic meal on it’s own. If you wanted extra substance warm tortillas or crispy tortilla chips would be good.

What wine goes with Mexican Tofu Magic Meal?

I like a crisp dry Sauvignon blanc, Pinot Gris or Riesling. Lighter reds will work like a Pinot Noir.

What can I add to my Mexican Tofu Magic Meal to make it taste better?

If it’s tasting a little flat my first solution would be more Tajin OR sea salt flakes (or any salt) and then if that doesn’t do the trick go for a squeeze of lemon or lime. And if you want more excitement some freshly grated parmesan cheese or chilli flakes or freshly ground black pepper can liven things up.

    I am so grateful to you for alerting me to the fact firm tofu doesn’t need to be cooked! I have learnt I prefer it just warmed through which has made including it in meals so much quicker and easier.

    Loved this with some super tender broccoli and can’t wait to have it again.

  • Finally! A use for the bottle of Tajin I’ve had sitting around the house for ages. I think I bought it for making margaritas, but we don’t drink any more so it’s just been sitting there, lonely and unloved. Definitely want to try this. This is another place where I would consider topping with some cilantro leaves in addition to the sour cream.

      Made this for dinner tonight and it was a hit. I did heat the tofu, because I like it that way better. I had’t realized that I’d never before opened my bottle of tajin. I’m glad to have an excellent use for it plus another really easy meal.
