This recipe should come with a warning! Because it’s so incredibly quick and easy BUT (and here’s the dangerous part) luxuriously delicious. Yes this 2-Ingredient Creamy Chocolate Hazelnut Pudding is that good.

And all the effort you need is to stir together some creamy smooth ricotta from a tub with everyone’s favourite choc hazelnut spread.

Creamy Choc Hazelnut Puddings

just 2 ingredients and made in less than 5 minutes!

Ingredients

  • 3-4 tablespoons smooth ricotta from a tub
  • 2-3 teaspoons nutella

Instructions

  • Place ricotta in a small bowl.
  • Stir in 2 teaspoons nutella.
  • If using the 3rd teaspoon, dollop it in the middle of the pudding. Try not to inhale in one mouthful.

Variations & Substitutions

dairy-free – use a food processor to blend together 200g roast cashews, 2-3 tablespoons icing sugar and 100g (3.5 oz) dark chocolate until all finely ground. Then add 1/2 cup boiling water and keep processing until you have a smooth creamy chocolate pudding. If you want the hazelnut flavour replace 1/2 the cashews with roast hazelnuts. Will serve 3 or so.

peanut – use chocolate peanut butter or regular peanut butter instead of the nutella.

no ricotta – you can make a chunkier version using cottage cheese. Greek yoghurt will also work.

deli ricotta – if you can only get the firmer ricotta from the deli instead of the creamy smooth ricotta in a tub – just puree the deli ricotta with a little cream to make it smoother before using as per the recipe.

crunchy – serve sprinkled with chopped roast hazelnut or other roast nuts.

double choc – double the nutella or serve with grated chocolate sprinkled over.

Waste Avoidance Strategy

ricotta – in a sealed tub it usually has a shelf life of a few weeks in the fridge. If in an opened container, will only keep for a few days so use for another meal or freeze.

nutella – keep it in the pantry.

bland – more nutella.

too dry – did you use the creamy ricotta form a tub (not the deli ricotta in a basket) no dramas – just mash in some cream to moisten.

Can Creamy Chocolate Hazelnut Pudding be made ahead of time?

Yes! Just prepare as per the recipe. Either keep at room temperature if it’s only a few hours before serving or refrigerate if longer. Then to serve, bring back to room temperature or you can eat it chilled.

How long does Creamy Chocolate Hazelnut Pudding last in the fridge?

In theory leftovers will keep in an airtight container in the refrigerator for at least a week or can be frozen. But I’m yet to have any leftovers to verify this assumption 😉

  • I’m wondering about the sugar content of Nutella – I don’t have it in my pantry because I think of it as ‘sweetened’. Could I use cacao plus actual nuts instead?
