Standard bag of salad = approx 150g (5oz).

‘PREP AHEAD’ POSSIBILITIES

Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.

Easy Mushroom Loaf
MUSHROOM LOAF (30 minutes)
Yes! Just cook as per the recipe but keep the goats cheese separately. Leftovers will keep in the fridge for up to 2 weeks or can be frozen. To serve, warm gently in the oven or allow to come to room temp. Or fry slices in a little oil.
Cabbage ‘Lasagna’
LASAGNA (60 minutes)
Absolutely! Just cook as per the recipe but keep the salad / spinach separately. If you like you can prepare up until the end of step 5 and save the final baking and browning until you’re ready to serve. Will keep in the fridge for 2 weeks or can be frozen. To serve, defrost first (if frozen) then warm in the oven 200C / 400F for 15-20 minutes. If reheating lasagna that has already been browned, cover with foil to avoid burning.
Cheesy Cauli & Bacon Bake
CAULI & BACON BAKE (30 minutes)
Yes! Just cook as per the recipe but don’t do the final cheese melting and keep the salad / parsley separately. Will keep in the fridge for 2 weeks or can be frozen. To serve, crank your oven back up to the highest setting and cook for 5-10 minutes or until everything is hot and cheese is melted.
10-Minute Massaman Curry
MASSAMAN (10 minutes)
Yes! Just cook curry as per the recipe but keep the cauliflower rice separately. Leftovers will keep in the fridge for up to 2 weeks or can be frozen. To serve, bring back to a simmer and serve on cauli rice.
Broccoli Puttanesca
PUTTANESCA (10 minutes)
Yes! Just cook as per the recipe. Leftovers will keep in the fridge for 1-2 weeks or can be frozen. To serve, warm in a pan with a little oil.
Peanut Butter Chocolate Fudge
FUDGE (15 minutes prep plus 2 hours to set)
Essential. You need at least 2-3 hours to get the mixture to set in the fridge.

VEGGIES
salad leaves / baby spinach – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
broccoli – in the fridge wrapped in a plastic bag.
cabbage – will keep wrapped in a plastic bag in the fridge for weeks if not months.
cauliflower – in the fridge wrapped in a plastic bag.
cherry tomatoes – best flavour at room temp. Will keep for longer in the fridge in the package purchased in.
green herbs – in the fridge wrapped in a plastic bag.
mushrooms – in a brown paper bag in the fridge to avoid sweating.
red chilli peppers – in the fridge wrapped in a plastic bag.

PROTEIN
bacon – in the fridge in the packaging they were purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
ground (minced) beef – in the fridge in the packaging it was purchased in.
steaks – in the fridge in the packaging they were purchased in.

DAIRY
parmesan – in the fridge wrap in baking paper and store in a sealed plastic bag or airtight container.
goats cheese – in the fridge in the packaging it was purchased in.
cheese – in the fridge. I prefer to wrap in baking paper or waxed paper and then store inside a sealed plastic bag or other container.
sour cream – in the fridge in the packaging it was purchased in.
