Standard bag of salad = approx 150g (5oz).

‘PREP AHEAD’ POSSIBILITIES

Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.

Zucchini Falafels
FALAFELS (30 minutes)
Yes! Just cook as per the recipe but keep the parsley and hummus separately. Leftovers will keep in the fridge for 1-2 weeks or can be frozen. Serve at room temp or pop them in the oven for a few minutes to warm through.
Zucchini & Chicken Pad Thai
ZUCCHINI (5 minutes)
The zucchini can be spiralized up to 3 days ahead. Don’t add the salt and keep in an airtight container in the fridge. Everything else is best hot from the wok.
Japanese Steaks with Ginger Miso Mustard
SAUCE and BROCCOLINI (15 minutes)
You could make the sauce in advance and keep it in the fridge for up to 2 weeks. Broccolini can also be steamed ahead and then warmed. Best to cook the steaks fresh!
Amazing Avo Sauce
SAUCE (15 minutes)
Yes! Just make as per the recipe. Leftovers will keep in the fridge for up to 1-2 weeks or can be frozen. Serve chilled or allow to come to room temperature.

VEGGIES
avocado – store at room temperature to avoid browning. Once cut, cover the surface with cling wrap and store in the fridge. Keeping the stone in the cut avocado helps.
green herbs – in the fridge wrapped in a plastic bag.
broccolini – in the fridge wrapped in a plastic bag.
ginger – in the fridge wrapped in a plastic bag. I also tend to keep it in the freezer in a ziplock bag.
limes – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.
salad leaves – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
zucchini (courgettes) – in the fridge wrapped in a plastic bag.
berries – in the fridge in the packaging they were purchased in.

PROTEIN
chicken thigh fillets – in the fridge in the packaging they were purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
fish fillets – in the fridge. Get your fishmonger to pack them with a small bag of ice to keep as cold as possible.
steaks – in the fridge in the packaging they were purchased in.

DAIRY
goats cheese – in the fridge in the packaging it was purchased in.
mascapone or cream – in the fridge in the packaging it was purchased in.
