‘PREP AHEAD’ POSSIBILITIES

Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.

[1] Broccoli al Limone
BROCCOLI (15 minutes)
Just cook as per the recipe but keep the basil and cheese separately. Leftovers will keep in the fridge for up to 2 weeks or can be frozen. To serve, warm in a pan with a little oil. Add cheese and serve with basil and extra cheese as per the recipe.
[2] Quick Taco Bowls
TACOS (15 minutes)
Just make sauce and prep ingredients as per the recipe but keep everything separately. Leftovers will keep in the fridge for up to 1 week. Everything can be frozen apart from the lettuce.
[5] Macadamia Satay
SATAY (15 minutes)
Just cook as per the recipe but keep the veg separate. Will keep in the fridge for up to 2 weeks or can be frozen. To serve, bring back to a simmer and add the veg. Or the veg can be cooked into the sauce before freezing if you prefer.
[6] Little Lemon Delicious Puddings
PUDDING (5 minutes)
Just prepare as per the recipe but keep the pecans separately. Will keep in the fridge for up to 1 week or can be frozen. Serve chilled with the freshly chopped pecans.

INGREDIENT STORAGE Best Practices

Also see the WASTE AVOIDANCE STRATEGY with each recipe for tips on preserving ingredients for longer periods if required.

VEGGIES
avocado – store at room temperature to avoid browning. Once cut, cover the surface with cling wrap and store in the fridge. Keeping the stone in the cut avocado helps.
green herbs – in the fridge wrapped in a plastic bag.
bok choy – in the fridge wrapped in a plastic bag.
broccoli – in the fridge wrapped in a plastic bag.
cos lettuce – in the fridge wrapped in a plastic bag.
green onions (scallions) – in the fridge wrapped in a plastic bag.
whole lemons / limes – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.

PROTEIN
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
salmon/fish fillets – in the fridge. Get your fishmonger to pack them with a small bag of ice to keep as cold as possible.
steaks – in the fridge in the packaging they were purchased in.

DAIRY
cream – in the fridge in the packaging it was purchased in.
parmesan – in the fridge wrap in baking paper and store in a sealed plastic bag or airtight container.
ricotta – in the fridge in the packaging it was purchased in.
