‘PREP AHEAD’ POSSIBILITIES
Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.
[1] Curry Stuffed Eggplant with Yoghurt
EGGPLANT (30 minutes)
The eggplant can be roasted ahead. Store it by itself in the fridge for up to 2 weeks or freeze. The filling meat / lentils / chickpeas etc can also be prepared and stored in the fridge up to a week (for the meat) or 2 weeks for the rest. Filling can be frozen.
[2] Summer Sausages with Pea & Pesto Mash
SAUSAGES (30 minutes)
Sausages can be poached ahead and kept for 1-2 weeks in the fridge or frozen. Pesto pea mash can also be made ahead and ‘fridged’ or frozen. Just allow to come to room temp before using.
INGREDIENT STORAGE Best Practices
Also see the WASTE AVOIDANCE STRATEGY with each recipe for tips on preserving ingredients for longer periods if required.
VEGGIES
frozen peas – in the freezer in the packaging they were purchased in.
avocado – store at room temperature to avoid browning. Once cut, cover the surface with cling wrap and store in the fridge. Keeping the stone in the cut avocado helps.
salad leaves / baby spinach – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
basil – store in a plastic bag in the fridge for 1-2 days. For longer storage wash and spin dry the leaves in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge. For long term make pesto or basil oil.
eggplant – in the fridge wrapped in a plastic bag.
chillies – in the fridge wrapped in a plastic bag.
lemons – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.
PROTEIN
chicken – in the fridge in the packaging it was purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
fish fillets – in the fridge. Get your fishmonger to pack them with a small bag of ice to keep as cold as possible.
sausages – in the fridge in the packaging they were purchased in.
DAIRY
buttermilk – in the fridge in the packaging it was purchased in.
goats cheese – in the fridge in the packaging it was purchased in.
parmesan – in the fridge wrap in baking paper and store in a sealed plastic bag or airtight container.
yoghurt – in the fridge in the packaging it was purchased in.
Jules, I would agree wholeheartedly with what Sharon had to say. The pdf version was much easier to use. And I also miss having everything on one page to start, including the grocery list. The items on the grocery list also no longer show what meal/s they are tied to which was extremely helpful.
But thank you for all your great work. The meals are what count, & they are amazing as always! 🙂
Thanks so much for the feedback Megan!
I get where you’re coming from.
The thing is you really need to save the meal plan to your own collection and then edit it so the shopping list will then only show the relevant items up front so you don’t need them tagged. Would you be willing to try it?
I know it’s a little more work up front but it does give you more control.
So glad you’re enjoying the meals!
Jx
ps. Are you also printing the plans?
Hi Jules,
One thing I loved about the previous version of the meal plans was the print-friendly landscape oriented pdf. I really appreciated being able to print 2-3 recipes on one page. I find it a lot easier to cook with printed recipes rather than trying to keep a device awake while cooking (especially with messy hands and fingers). Is there any way to incorporate the old version of the print-friendly recipe format?
I also found the previous format a lot quicker to deal with each week. I opened the full color pdf with all the substitutions on my computer and printed out the shopping list and print-friendly pdf, then wrote any substitutions on my recipe and shopping list. That worked well for me and was quick and I appreciated the landscape format for both recipes and shopping list. Last week, I ended up taking screen shots of each of the recipes from my browser window that I shrunk the width of to approximate getting the old format, using Adobe InDesign to paste them 3-up to a page and printed from there but I don’t really want to do that every week going forward.
I can only imagine how much work the redesign was so kudos to you for making it happen.
Thanks,
Sharon
Hi Sharon
Thanks for reaching out. Am sure we can find a solution for you
Just so I understand, is the problem that with the new print setup it prints one recipe per page? So it’s 6 pages total instead of 2.
