Have tried meal planning many times but it just got too complicated – too many ingredients and too time consuming.

Hi Jules, I made the almond hummus to have with scrambled eggs … and added Moroccan spices to the oil dribbled over. My new favorite b/fast. I also sorted out my spices and condiments and have restocked them. Today I will try to make your DIY mayonnaise. For lunch its your Chicken with pinenuts but served instead with some more of the almond hummus, plus salad. Your REceipe list is so inspiring and ‘nuturing’ to read through. merci merci Jena

I cooked the Eggplant Miso (but, without the miso).
I cooked Chicken breasts marinated in Italian seasoning, then served on baby spinach! I was happily surprised how well I liked the eggplant ( I never had it before ?).
It was a challenge to cook, but after turning down the stove temp. it went much better!! We really enjoyed the meal.

I just started the 7 day meal planning kick starter. Task for first day was to share ‘why’ simplifying meal planning would work for me.
Main reason is that I want to incorporate daily (or most days…) cooking into my life & my partner’s life, after a busy work day. The recipes need to be something I look forward to eating at the end of the day but not complicated / lengthy enough to make it untenable. This is one of the reasons I’ve turned to this website and your digital cookbooks a lot over the years.
Secondary reason is that I always seem to start & stop meal planning- and want to find a more simple, routine way of doing it that will ensure tasty, healthy, quick options & some treats. I do think meal planning is key for sticking to a healthy eating plan & for doing more cooking

I’m similar to Diane, a long term member and follower but a bit lost in where to focus so looking forward to joining this restart. However I despaired at the promo photo. I’ve always been intrigued at the lack of vegetable variety in your recipes and then the last ebook was page after page after page of broccoli or cauliflower. Please can you mix it up.

And you know just because I use broccoli or cauliflower doesn’t mean you can’t substitute other vegetables…
For example in the brocccoli and bacon bowls in the image above you could easily use any cooked vegetables instead of the broccoli – say roast or grilled eggplant and peppers. Pan fried zucchini – it’s really up to you 🙂
One of the PLUS points of the meal plans for me is the relative fluidity of the recipes. They are not written is stone and I know I can use the recipe’s broad directions AND choose what meat or veg to cook.
I really don’t like aubergines (eggplants), so I use courgettes (zucchini) instead. I really like cabbage, bell peppers, cauliflower and broccoli, so I always keep some to hand, fresh or frozen…
