Q. Can I use other recipes?
If you really want to of course. BUT one of the ideas of the challenge is to make life as simple and as easy as possible so I really recommend constraining yourself to only using the recipes in the meal plans listed above. There is magic in limiting choices.

Q. Will everyone get a prize?
A.
All active simple meal plans members who complete the challenge and cook the number of meals they committed to will be eligible for the prize.

Q. Do we have to use recipes from a particular menu only, or can we use any of your recipes and it will count?
A. It’s up to you. I’ll include 4 meal plans (2 x summer and 2 x winter) here. And I recommend focusing on those because it will make it easier for you not having too many options. Keeping it simple is key! But if you really want to use other recipes that will count. ?

  • I cooked the Roast Pesto Chicken & Broccoli tonight. We both really enjoyed it with the pesto crust on the chicken and broccoli but I served it fewer salad leaves(Man doesn’t like salad much)
    We thought the balance between the ricotta,spinach leaves, chicken and broccoli was very good, making a tasty meal.

    I can’t get the link for Southern Hemisphere meal plan week of July 13 to come up, though. I’ve tried over several days.It usually opens a Northern plan.

  • Late start, but better late than never! Committing to 4 meals this next week. I cooked sausage and cabbage stir fry tonight, a simple recipe favorite.

  • Getting a bit of a late start as we have been moving over this past week. Not unpacked but Committing to 4 total! If I can find my dishes and pans!

  • Successfully made quick chicken & parmesan salad. Loved the dressing of lemon & olive oil, so simple and tasty, especially with the parmesan cheese. Just delicious. Thanks Jules.

  • Going for 8. 4 this week and 4 next week. Chicken with Parmesan was great and simple. Added fresh blueberries To the mix and loved the freshness. I plan on using these simple meals during the week and cooking up a storm on the weekend.

    • Excellent Patti – that’s what I do. Simple during the week and more elaborate on the weekends.

      And would never have though to add blueberries to that salad πŸ™‚

  • I committed to 3 meals each week on the challenge with the recipes provided. I get β€œdecision fatigue” planning every day of the week. Currently, I am actively using what I have in the house freezer and garden. Therefore, I am appreciative of the variations and suggestions with each recipe!
    I also practice intermittent fasting and only need one meal on the days I cook.
    The chicken parm was great. I used the greens from our garden and pecorino romano from the fridge. I topped everything off with salt and cracked pepper. My husband likes the addition of olive oil and anchovy paste

  • I must admit that when I looked at the recipe for beef tonnato, I was highly skeptical. It just didn’t sound or look like something I would like. But Jules has never led me astray before so I gave it a try – and I am really glad I did. The lemony creaminess and the merging of the beef and tuna were wonderful. It is now included in My Favorite Recipes. Another benefit of this challenge is that it is getting me to try new things and have unexpected delicious meals.

    • You made me so happy to read this Hal! One of my favourite things is when people are skeptical about an idea and try it anyway. So fun!

  • Day 1 was delicious! Indian Spiced Omelet for lunch. I had 1/2 a leftover jalapeno, so I finely chopped and added that too. I love spicy foods and that was a tasty addition.
    Dinner was Chicken and Parm Salad with sliced, sauteed mushrooms subbed for the meat – vegetarian here! I added the parm as soon as the mushrooms were done so the cheese melted slightly. So good!

  • Day 2 and Meal 2 – I made the Taco Tuesday Bowls. I was sceptical how the meal would go without actual taco shells, but the avo, lime & sour cream together was satisfying and filling enough.

  • Day 1 and Meal 1 complete!! I actually had a craving for your Cacio e Pepe Broccoli, so that was my first meal. I added some smoked trout for protein. Really enjoyed this meal.

    I have cooked and prepared Sunny Parisian Carrot Bowls & Beef Tonnato so far. I added fennel with the carrots, yum. I have planned the rest of the menu this week, though you will have to wait for my next post for an update. I took pics to add, though I’m not sure how to include in post.

    • Wonderful Meika – can imagine the fennel was lovely with the carrots.

  • It’s still early afternoon here on “The Day” so I’m just in time to join in to commit to four. It’s the leftovers that influence my numbers – I’m always grateful to have leftovers but they last too long to increase my commitment by much. I will go shopping to see what I can find from the much-depleted quarantine stocks. Your substitutions always come in handy. Thanks Jules

  • I cooked the spinach and feta burgers. I loved baking them in the oven, less mess and stress than trying to pan fry them. As an added bonus the texture on the burgers was fab. I’ll definitely being making these again.

  • Hoping to try for 8 over the fortnight. Will be using the Winter menus – need some warming dishes for a Tasmanian winter!!

  • Newbie here – I’m aiming for 4 over 2 weeks. Shouldn’t be too hard as I’m desperate for lunch ideas (wfh lunch has been lovely) & with cunning plans to stuff things into a thermos anything that doesn’t appeal to my carnivore/gluten loving partner I can eat for lunch

  • I am pumped to cook seven meals over the next two weeks. Thanks for the incentive and for the nurturing environment.

  • I’ve found 10 meals I am excited about trying. I live alone and I’m always looking for dishes that are easy, quick and don’t leave me with a week of leftovers. I am a committed Keto practitioner who is also vegetarian, so I will be utilizing your veggie and low carb options.I do eat fish occasionally and a couple of the recipes seemed to fit with my “it really has to be good” test for me to risk a fish dish. I have ingredients for many of the dishes already on hand, so I am anxious to get cookin’!

  • I will say I will cook 4, hard for me to get motivated when it is so hot. But then again, I do have a lot of veg in the garden to eat up.

  • I’m going for the full 10. I live alone so I love that your meals give 2 servings. Leftovers for lunch the next day. Now, I’m off to the farmers markets just down the road

  • I can commit to 4 meals from these plans. I often pull from other recipes on the site since I have some picky eaters. If I can count those too, I’ll try to beat my challenge!

  • By the name of the recipe, I pick 7! Two others (when reading the recipe) can do it. When I watch the videos, you make 1 more look better but … I’ll commit to 7 lol one of my unlucky numbers so I’ll challenge myself to probably 8+!

      Do you think you should commit to 4 and be certain about it. ‘Hoping’ for 6 sounds like you’re setting yourself up for disappointment. Just a thought πŸ™‚

      • I cooked the Spinach & Feta burgers last night. An absolute hit!

        I have two teenage daughters who have decided all of sudden to become fussy eaters – and by fussy I mean essentially white food aka junk.

        Last night I served up the burgers with some garlic mushrooms and brocolli. They looked at the burgers like they were cowpats andI asked them just to try it pleeeeeease.

        Anyway, next minute plates clean and asking if there were more! #Winning

  • I commit to 10 meals – but I’m cheating, because during the time of the challenge, my husband is cooking, so I’m doing the challenge now. It’s easy for me, because most of my go to recipes these days are from SMP. For some of my meals I’m cooking a double recipe so it works for 2 meals, but even with that I think I have 10 meals.

      Don’t forget to keep a record of what you cook so you can claim your prize πŸ™‚

  • Going for 10, I meal prep on the weekends which really helps during the busy week. I am transitioning from Hungry Roots, which made it really easy to accomplish. But my husband in all in on wanting to cut down on all the recycling, and hopefully saving some $$. Looking forward to cooking again with you Jules.

  • I’ll aim for 6 meals. As there is only 1 of me, I’m often eating leftovers the next day (which is also great!).

  • I was going to say I can do the full first week but only two from second. Then oops wrong week I’ll be back at work I work 4 nights (Wed-Sat). So I can only do Mon and Tue nights. Feel silly saying I’ll only do 4

  • I would love to say that I’m going to do 10, but I KNOW that something will make that not happen…. so I will break myself in and commit to 6. I should be able to do that much.
