I have really enjoyed the 10 day challenge. So far I have cooked 8 of your simple meals so far π When you said today (in the webinar) that sometimes people don’t try your recipes because they appear too simple, you are so right Jules. It’s an oxymoron but true, we (I) stick to what I know and are comfortable with.Β I have enjoyed so many different flavours these last 2 weeks, using much less chilli to jazz things up which means my IBS is happy too πΒ My weekly meal plans will now be more of your recipes and less of my old faithfuls – thank you Jules πΒ Β

I’ve now cooked the six meals I said I’d do in this Challenge. They are:
1. Fish with Lime and Miso Butter
2. Beef & Broccoli Stir-fry
3. Indian Spiced Omelette
4. Roast Pesto Chicken & Broccoli
5. Smoky Cauli Taco Bowls
6. European Burgers with red wine sauce
but I am going to make some more in the next few days – Tonight it will be Fish with Olive Lemon Salsa, then Ploughmans’ Pie with Ham, Salmon with salsa and ginger sour cream and then finally Zucchini Parmigiana
I have enjoyed trying these new simple and tasty recipes and my husband has enjoyed them too!! Thanks.

I am going to give a list of what I made, since I did it early. My husband did Magic Sausage Supper last night. My meals were 1) noodles with parmesan peas; 2) gorgeous greens tart; 3) broccoli lemon parmesan; 4) crunchy snow pea & garlic stir fry; 5) crisp beef with balsamic salad; 6) magic sausage & cabbage supper; 7) Asian pork & broccoli; 8) cheesy cauliflower & bacon bake (a real favorite!); 9) feta & meat balls; 10) mushroom, sausage & feta hash; 11) chunky roast cauliflower & chorizo. As you can see, we pretty much live on SMP recipes – even without a challenge.

Does the list on this page include both the northern and southern hemisphere menu plans? I see cabbage. It got cold and and wet in N Europe and nobody wants salad. Can I mix plans for the challenge to count?

Meal 1 for Monday dinner was Spiced Cabbage with minced turkey instead of feta. Served with pappadums, an Indian crispy wafer. It was delicious! We have enough leftover for another meal plus! Can it be frozen? Or do leftovers count for a meal ?

Yes it can totally be frozen. And no leftover don’t count unless you cook something else to have with them π
For me it was the quick chicken & parmesan salad – still had cooked Indonesian spiced chicken filet in the fridge, grana padano cheese and lime instead of lemon – yum! π Meal 1 – check!
