Q. Can I use other recipes?
If you really want to of course. BUT one of the ideas of the challenge is to make life as simple and as easy as possible so I really recommend constraining yourself to only using the recipes in the meal plans listed above. There is magic in limiting choices.

Q. Will everyone get a prize?
A.
All active simple meal plans members who complete the challenge and cook the number of meals they committed to will be eligible for the prize.

Q. I’m busy that week. Can I join another time?
A.
Absolutely! You can take the challenge any time that suits you. You’ll just need to claim your prize by 21st May 2021. But just doing the challenge and enjoying the delicious meals will be a reward in itself if you want to take the challenge after that date.

  • Yesterday (Thursday), I made egg fried rice. I also added taiwan cabbage as vegetable. I served with some soy sauce, chili sauce and home made roasted almonds. And a kombucha for drink. Such a great dinner.

    Today (Friday), I will try the simple green salad recipe with smoked salmon, avocado with my home made roasted almonds.

  • I had Quick Raspberry Yoghurt Mousse yesterday. So delicious and healthy. In preparation for next meals, I made a batch of raspberry sauce by cooking raspberries on low heat with lemon juice and honey. This sauce goes well with anything: yogurt, ice cream or even on a peanut butter sandwich. I also roasted a batch of almonds using my air fryer. I had some on my yogurt and save the rest for salad topping.

  • Today is Tuesday May 4 and I tried the recipe One Pot Cauliflower, Chicken & Peanut Curry. Such a lovely dish. I shared with my sister who is the cook in the family and she really likes it.

  • Today is Monday May 3rd and I made the Vietnamese meatballs. I substituted mushroom with fungus and soy sauce with fish sauce. I served this dish with a salad topped with some cherry tomatoes. And I did not need any salad dressing as the tomato sauce already did the trick. Absolutely delicious and super healthy. I ate half and saved the other half for another night.
