400g / 14oz each
Instructions
Preheat oven to 150C (300F).
Chop all veg into chunks and place in a large oven-proof dish. Drizzle very generously with extra virgin olive oil.
Cover and bake for 2 hours.
Remove the lid, stir well then continue to bake for another 2 – 2 1/2 hours or until all the veg are tender and the sauce has reduced. Taste season.
