zest of 1 lemon

Instructions
Place butter, eggs, sugar, lemon juice and zest in a medium saucepan and place over a medium low heat.
Stir until butter has melted then keep cooking and stirring until the mixture has thickened like a custard.
Remove from the heat and pass through a sieve if you’re after a smooth curd.
Place in bottles fresh from the dishwasher. Refrigerate.
