Herby Green Roast Chicken

coriander (cilantro)

red chilli peppers

soy sauce
6-8
tablespoons
neutral flavoured oil
4
chicken thigh fillets
bone out (about 450g / 1lb)
2
limes
halved, to serve

baby spinach
to serve
Instructions
Preheat your oven to 200C (400F).
Puree coriander, parsley, chilli, soy sauce and oil with a stick blender or food processor until you have a chunky paste.
Toss chicken in the herb mixture. Marinate for up to 36 hours or cook straight away.
Lay chicken fillets out flat in an oven proof dish and pour over the herb mixture.
Bake for 20-25 minutes or until chicken is no longer pink in the middle.
Serve on a bed of baby spinach with lime on the side.
