Chocolate ‘Earth’

dark chocolate
finely chopped

Instructions
Weigh water and sugar into your smallest saucepan.
Place on a high heat and bring up to a boil. Don’t stir.
When the temperature reaches 135C (275F), remove from the heat and add the chocolate. Stir vigorously until it comes together to form your ‘earth’.
Transfer earth to a tray lined with baking paper to cool. Store in an airtight container.
