ground (minced) chicken

cups
cooked brown rice
250g / 8oz

tablespoons
miso paste
4
tablespoons
lemon juice
2
handfuls
baby spinach

Instructions
Heat a few tablespoons olive oil over a very high heat in a large saucepan.
Add chicken and stir fry for a few minutes or until the chicken is no longer pink.
Add 3 cups water and the rice and bring to a simmer. Cook for a few minutes.
Stir in miso paste and lemon juice. Taste and season.
Serve with spinach leaves on top, if using.
