COOKS NOTES + SUBSTITUTES:

Brazil Nut ‘Parmesan’ recipe here.
Broccoli frozen is fine. Use 1 packet (or 2 if you’re really hungry and love broccoli).
Cashew Yoghurt recipe here.

Laksa Paste use another thai curry paste like red or green curry or even an Indian curry paste. Just be careful to adjust the quantity to your liking (you probably won’t need a whole jar). The other option is to go for a coconut milk based soup so just skip the laksa paste and use a good squeeze of lime juice for some zing.
Sumac is a lemony flavoured spice. Just skip it or replace with smoked paprika.
Unless otherwise stated all cans are 400g / 14oz.
Standard bag of salad = approx 150g (5oz).

‘PREP AHEAD’ POSSIBILITIES

Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.

[1] Beautiful Broccoli Burgers
BURGERS (30 minutes)
Yes! Just cook as per the recipe but keep the salad separately. Leftover burger patties will keep in the fridge for up to 2 weeks or can be frozen. To serve, allow to come to room temp or warm in the oven.
[2] Green Chicken Bowls with Pine Nut Mayo
CHICKEN BOWLS (30 minutes)
Yes! Just cook as per the recipe but keep the pine nuts, mayo and cooked chicken and veg separately. Leftovers will keep in the fridge for 5-7 days. The chicken and veg can be frozen but the mayonnaise will split if you freeze it.
[4] Meat ‘Diamonds’
MEAT “DIAMONDS” (30 minutes)
Yes! Just cook as per the recipe but keep the pine nuts and salad separately. Leftovers will keep in the fridge for up to 2 weeks or can be frozen. To serve, warm in the oven 200C / 400F for 10-15 minutes.

VEGGIES
salad leaves / baby spinach – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
basil – store in a plastic bag in the fridge for 1-2 days. For longer storage wash and spin dry the leaves in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge. For long term make pesto or basil oil.
broccoli – in the fridge wrapped in a plastic bag.
kale – in the fridge wrapped in a plastic bag.
lemons – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.
onions – in a dark pantry.
berries – in the fridge in the packaging they were purchased in.
zucchini (courgettes) – in the fridge wrapped in a plastic bag.

PROTEIN
bacon or ham – in the fridge in the packaging they were purchased in.
chicken – in the fridge in the packaging it was purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
ground (minced) beef – in the fridge in the packaging it was purchased in.

DAIRY
butter – in the fridge in the packaging it was purchased in.
parmesan – in the fridge wrap in baking paper and store in a sealed plastic bag or airtight container.
yoghurt – in the fridge in the packaging it was purchased in.
