COOKS NOTES + SUBSTITUTES:

Chipotle Chillies in Adobo Sauce – replace with 2 teaspoons tomato paste, 1-2 teaspoons smoked paprika and dried chilli powder to taste (1/2 to 1 teaspoon).

Zucchini Tortillas recipe here will need 2 medium zucchini (300g / 10oz), 50g (2oz) grated parmesan, 50g (2oz) almond meal, 1 egg.
Unless otherwise stated all cans are 400g / 14oz.
Standard bag of salad = approx 150g (5oz).

‘PREP AHEAD’ POSSIBILITIES

Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.

[1] Best Ever Broccoli Salad
SALAD (20 minutes)
Just cook as per the recipe but keep the parsley and parmesan separately. Can be left at room temp for an hour or so but any longer pop in the fridge. Will still be delicious after a week in the fridge but if serving for company best to serve within 24 hours because the broccoli loses its beautiful green colour over time. Leftovers will keep in the fridge for 2 weeks or can be frozen. To serve, toss in the parsley and shave over the parmesan.

[6] Quick Strawberry Muffins
MUFFINS (30 Minutes)
I like these best on the day they’re made. But can be kept for 1-2 weeks in an airtight container in the fridge. Keeps for months in the freezer.

VEGGIES
broccoli – in the fridge wrapped in a plastic bag.
green herbs – in the fridge wrapped in a plastic bag.
cherry tomatoes – best flavour at room temp. Will keep for longer in the fridge in the package purchased in.
salad leaves – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
cabbage – will keep wrapped in a plastic bag in the fridge for weeks if not months.
red chillies – in the fridge wrapped in a plastic bag.
limes – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.
zucchini (courgettes) – in the fridge wrapped in a plastic bag.
lettuce – in the fridge wrapped in a plastic bag.
berries – in the fridge in the packaging they were purchased in.

PROTEIN
bacon – in the fridge in the packaging they were purchased in.
chicken thigh fillets – in the fridge in the packaging they were purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
minced (ground) beef – in the fridge in the packaging it was purchased in.
fish fillets – in the fridge. Get your fishmonger to pack them with a small bag of ice to keep as cold as possible.

DAIRY
parmesan – in the fridge wrap in baking paper and store in a sealed plastic bag or airtight container.
butter – in the fridge in the packaging it was purchased in.
yoghurt – in the fridge in the packaging it was purchased in.
