Thai Red Curry Paste substitute 2-3 teaspoons curry powder or use another curry paste. To make your own Thai green curry paste see recipe here.
Za’atar – substitute other spices like cumin, coriander, smoked paprika, baharat (Lebanese spice blend), mild curry powder or Ras el hanout.
Unless otherwise stated all cans are 400g / 14oz.

‘PREP AHEAD’ POSSIBILITIES
Here are suggestions for things you can possibly prepare ahead. They’re just suggestions though so please don’t feel like you need to devote your weekend to getting these steps done! It’s totally up to you.
[1] Broccoli & Goats Cheese Soup
SOUP (15 minutes)
Make soup as per recipe but don’t add the goat cheese. Refrigerate for up to 2 weeks or freeze. To serve bring back to a simmer and serve with goat cheese.
[4] Balsamic Cabbage + Sausages
CABBAGE + SAUSAGES (15 minutes)
Cook cabbage + sausages as per recipe but don’t add the feta and parsley. Refrigerate for up to 2 weeks or freeze. To serve warm in a pan with a little oil and add feta and parsely. You may like to add a little extra balsamic to freshen things up.

VEGGIES
broccoli – in the fridge wrapped in a plastic bag.
limes / lemons – in the fridge wrapped in a plastic bag. Can be kept at room temp if you prefer but will last longer in the fridge.
green herbs – in the fridge wrapped in a plastic bag.
cabbage – will keep wrapped in a plastic bag in the fridge for weeks if not months.
salad leaves – store sealed bag in the fridge. If buying loose leaves, wash and spin dry in a salad spinner then wrap loosely in paper towel and place inside plastic bag. Push out most of the air and seal. Store in the fridge.
berries – in the fridge in the packaging they were purchased in.
kale / collard greens – in the fridge wrapped in a plastic bag.
PROTEIN
minced (ground) chicken – in the fridge in the packaging it was purchased in.
eggs – I keep mine in the pantry because we eat a lot of eggs. Will last much longer in the fridge.
sausages – in the fridge in the packaging they were purchased in.
fish fillets – in the fridge. Get your fishmonger to pack them with a small bag of ice to keep as cold as possible.
DAIRY
goats cheese – in the fridge in the packaging it was purchased in.
feta – in the fridge. Will keep for months in an unopened package.
butter – in the fridge in the packaging it was purchased in.

Old Format ‘Print Friendly’ Meal Plan
I had all the ingredients for lebanese omelet with almond hummus on hand…. but turns out i was a little short on almond meal. I made up the difference with coconut flour and it was delicious! Next time i might try chickpea flour as a sub. I had leftovers at lunch today but since i was at work, i took chicken instead of eggs. Still tasty 2 days later, and filling. Thanks, Jules!

Surprised that coconut flour was a good sub for almond meal – but good to know!
I wouldn’t use chickpea flour as a substitute for almond meal in the almond hummus because it needs to be cooked before eating – raw chickpea flour tastes really beany. Not nice.

This week we will be making the broccoli soup because there was beautify broccoli at the local farmers market. Even though this is my first week, last week we made the Magic Sausage & Cabbage Supper…Yum!
