It’s been quite a while since I’ve been in touch. I hope you and your family are doing well.
I am doing well with my NH journey. My weight continues to decrease little by little, which is fine with me. Slow and steady wins the race!
I continue to weigh in nearly every day, and the number on the scale no longer has power over me, it’s just a number! I am managing my IBS fairly well and cooking 3 to 4 days every week. It gets a bit challenging finding recipes without onions and garlic, and yet I am managing to do so. I confess, I still wish we could search your site by Low Fodmap.
Following are questions I have for you:
1. My daughter and I LOVE your Hot Chocolate Mix! I am thinking of giving small jars of it, like the picture on the recipe, away as Christmas gifts and I would like to know if I have your permission to include your recipe. I can print the whole thing and make copies, being sure to include your contact information. I could also type it up on a recipe card, again listing your contact information. I would appreciate it if you would let me know at your earliest convenience, so I know how to proceed with my gift preparation.
2. For a variety of reasons, I have yet to complete all the lessons in the Joyful Cooking Course. I thought by signing up for the
Graduate’s course, I would be motivated to set a time to listen to all the sessions I missed. To date, that has not happened, and I don’t see it happening soon. For now, I am content with using your recipes, especially those with videos. Watching the video before I begin cooking a meal gives me so much confidence. Thanks for that! Yesterday I made Roasted Chicken and Vegetables with Pesto. Seeing how to prep the veggies before jumping in made it so easy. And we all loved the result!
Since I am mainly interested in the meal plans and recipes for now, I may want to change my subscription. What is the difference both in price and in content, between being a Simple Meal Plan subscriber and A Joyful Cook Graduate? If I decide to make a change, how do I do that?
On a final note, I remember that you shared that your husband had issues with IBS. I want to share that I have been using an app called Nerva, by mindset health. It is a program that teaches gut-directed hypnotherapy as a treatment for IBS. The program was created by Dr. Simone Peters when she was working with Monash University. I am in my last week of the 6-week program, and I am seeing benefit from it. It’s also been very easy to fit into my day. Also, Monash University just published their own Low Fodmap Cookbook. The recipes are not as simple and easy to follow as yours are, and there are no videos, however, there is some excellent new information including The Monash University Low Fodmap “Stack Cup” as a tool to help plan meals.

You can open up the recipe page and leave comments at the bottom of the recipe page.
Or in the inbox collection – there is an option to add a note in the collection >> so go to the bottom of the collection and click ‘add item’ then when the dialog box pops up it will say ‘search recipes’ – but there will be a little arrow on the right of this – click that and there will be an option to ‘add note’ – choose that and you can type your note and it will get added to the collection.
I’ll also get CAroline to reach out to you if you need more help with this.

Problems again. Jules posted the steak with chili oil. I clicked the link, was told I have to be a member. It never remembers me. Then, I logged on, went back to the email, clicked the link, and I still “have to be a member.” I see I’m the only having problems. Can’t this be made better? I love being a member, I make something almost every week, but recently, there have been so many problems.

Have you written anything about presentation / plating? I think it is an important part of cooking that maybe is sometimes overlooked.
Obviously, the food is styled/presented in all of your recipes (and they are attractive), but I wonder if there’s something you have written or could share with us to make our own meals more beautiful (perhaps, even in your typical, ‘simplicity’ style)?

No I haven’t written anything David – and agree it’s important.
The only thing I’d say is just start paying attention to what you like when you see photos of food or when you’re in a restaurant. And then trying those ideas yourself when you are cooking 🙂

Thanks, I expect to be a frequent question askerer for a couple of weeks as I dive into my learning process.
One that is top of mind is sterilising jars. I just have this fear they’re going to explode if I boil them (I don’t have an oven). Why is it they don’t explode/break? And how long should I boil it for?

If you start them in cold water and bring them up to the boil they won’t explode David – gradual change in temperature is fine.
Going straight from cold to boiling is where you run into problems!
If you’re still worried – just try it with one jar first 🙂
Or the other method is to put them in the dishwasher on a hot cycle.

A lot of the recipes on the website require an oven. I’m living in a small studio in Taiwan, and there is a chance I may move within 12 months (including overseas). I’m contemplating buying one of those small 9 Litre ‘ovens’ (not toaster ovens, but they look like them. They cost about $A50 (i.e. not expensive if I have to leave it behind).
Are they any good for the kind of techniques I will find I need to use an oven for on this website.
Yes one of those cheap bench top ovens would be perfect David!

I’m a jar sterilising convert, all going well!
I made some Marco’s Chilli Oil about 2-3 weeks ago. It has started to solidify and also some mould is growing in parts at the top of the inside the jar (stored in the fridge). How/why does the mould grow? Is it that I contaminated it with, say, the spoon that I was putting in there to get it out? Is there some way to prevent that?
I’m surprised you had mould growing after only a few weeks David – I would expect it to take longer. Have you checked your fridge temperature? It should be 4C or below.
The solififying is just what happens to oil in the fridge.
Its on almost the coldest setting (in Chinese) on a very old fridge (but it is still very cool), I imagine it would be 4 or below. I guess there is nothing I can do.
What does mould grow on, the chilli that is exposed to the air, bacteria that is on the bottle?
It sounds like your fridge could be better David – but it’s not the end of the world.
The mould grows on the bits of oil and chilli on the side of the bottle – I just wipe it off with a clean cloth and keep using the oil.
Very interesting, I threw the rest of it out, because the mould was probably on the side of the jar and potentially a little bit of the top of the chilli oil on the bottom. I don’t know if you’ve spoken to this on the website, but what about mould?
Some say to throw certain things out when they get mouldy (i.e. you can’t cut them off, say fruit or vegetables or at least some of them – things like sweet potatoes regularly get mouldy on the ends). Sometimes my avocados get mouldy on the ends (I notice market holders will often cut mouldy bits off so they can continue selling the vegetables).
Does it hurt if you accidentally eat some of it? (I imagine getting very sick, but this might not be completely true).
I’m pretty open to mould David – especially anything white and fluffy. They don’t make you acutely sick like bacterial food poisoning. Some moulds produce aflatoxin which gets stored in the liver and causes problems over time – but those tend to be the black moulds.
It really comes down to your risk tolerance 🙂

I was looking for the “Ask Jules” section, and it seems to no longer exist. I have a question about how a low carb diet works for you: do you have any issues with low energy level? I’ve had a lot of issues with low energy lately (and just read something someone wrote that said low carb sapped her energy and that she regained it when she went back to eating grains), but it seems like I had been eating low carb for quite a while (like at least 1.5 years) before the energy issues hit. Just curious to know if you’ve had any such issues. Thanks, Susan
Excellent question Susan –
For me low energy is usually either not enough iron or not enough protein (or both).
So on the odd occasion it happens I make some pate (I buy chicken livers 2lbs at a time) and make sure I have more red meat. And increase my protein in other ways – more eggs fish etc.
It’s unlikely to be carbs – that happens to some people when they first go keto because their body isn’t used to buring fat – so it takes a while for them to become metabolically flexible – but if you’ve been eating low carb for that long you would already have that metabolic flexiblity.
The other thing to get checked out is thyroid as this can cause low energy.
If you did want to do an experiment with increasing carbs that’s an option too – I’d recommend using legumes and starchy veg rather than grains.
But I’d play around with iron, protein and thyroid testing first.

Thanks, Jules. Yes, it does help. I am already under treatment for thyroid, since I had mine removed in 2008. I was having crazy test results for more than a year, so I’ve been seeing an endocrinologist, trying to get my TSH (thyroid stimulating hormone) under control. I have started using some legumes occasionally. It’s good to know that starchy veg and legumes are better than grains. I have been eating oats once or twice a week, and very occasionally have teff for breakfast, and will continue those for variety. I don’t know if my regular blood tests include iron, so if they don’t I will ask my doctor about it when I see him. As always, I appreciate your input.

Definitely get the iron tested. And hope the TSH gets back under control.
And play around with increasing your protein too = protein requirements increase as we age so it’s something to keep in mind.
It could be a combination of things causing the low energy.
I will see about getting my iron tested. I’ve been trying for quite a while to eat enough protein. I was trying for 30g per meal but my appetite has decreased significantly in my old age, so except for breakfast, I’m no longer certain I meet that level. I will also ask my endocrinologist about my energy levels, because my gut says that my decrease in energy coincided with the decrease in my dose of levothyroxine.
Your gut is probably right Susan – I’d say its the meds.
But also consider prioritizing protein – if your appetite is reduced the thing to cut back on is the legumes, grains and starchy carbs. Our protein requirement actually increases with age.

What is FODMAP???
FODMAPS are different types of fermentable carbohydrates that cause problems for people with bowel problems / IBS. There’s a low FODMAP diet developed by Monash University in Australia which helps people heal their guts. It’s a very restricitive diet and I wouldn’t recommend it unless you have this specific condition. Thanks for asking 🙂

When you have the collection open look for the option that says ‘add item’ – click on that and it will bring up options on different ways you can add recipes to that collection

We tend to eat a heavy meal at lunch and a lighter one at dinner. I’m wondering which your recipes will be suitable for. Lunch is the meal where I find myself wondering what I’ll make today so I was hoping to get help with that. But omelets and such won’t work for that meal. Actually I’m realizing I know the answer but I’ll leave this comment just to see how you respond so I know for further reference. I really admire your work and your attitude. Thanks !
You’re lucky to be able to eat a larger meal at lunch time Sigal. One day I’d like to get to that way of eating – much better for sleep to go to bed on a lighter stomach.
I’d just use the meal plan recipes for your lunches.
I know people think of an omelette as a lighter meal but it really depends on what you serve it with. You can always add a more substantial salad or vegetable dish.

I used to be a member, but when we fell on hard times, I cancelled my membership. Today,(and after having been on your webinar) I purchased the member ship once again (yay!), but when I was supposed to set up my account (after I had made payment via PayPal), it recognized that I already had an account. So, instead of signing up as a NEW member, I therefore tried the other option, logging in as a member who is renewing their membership. However, even though I was able to log in, it didn’t recognize that I had purchased/ set up a new membership and I got the message that my membership had expired. Since the system didn’t allow me to register as a new member, what should I do?

Is there any consideration to be able to easily add a substitution to the recipe/shopping list? The reason I ask is my daughter is vegetarian and on the evenings and weekends she is with us we have 3 people to feed (so the serving increase is great) but I need to substitute the meat and I have missed a few or ended up with extra meat because the shopping list always generates from the main recipe. Or perhaps having it as the note after the meat would help. I am open to any suggestions. I have been reading the recipe and then manually removing items and adding items to the shopping list but it takes some time.

I like the new format and look forward to using it more. My wife is just coming out of the first trimester of her pregnancy and is looking forward to doing more cooking. Is there any way to completely remove recipes from the meal plan? I’ve rearranged them to better fit our schedule, but there are some foods we never or rarely eat (eggs and steak being on the list) so there are usually 2-3 recipes every week that I would prefer to remove and substitute with something we like better. I just can’t figure out how to do it in the new format. Thanks!

First, let me say, the automatic meal planning service you offer is amazing; which is why I am on my second year with you and see myself using your service for a very long time! The meals are minimalist, healthy, quick, and delicious.
Your meal planning service and my “Instant Pot Miracle – 6 Ingredients or Less” cookbook is the foundation to my sanity and have empowered me to consistently deliver healthy meals to my family. I have very picky eaters in my household and when they are a little skiddish about trying what’s on your meal plan, I just make them pick a recipe out of that 6 ingredient Instant Pot cookbook. Your service and that cookbook has lowered my stress. As I told you before, you turned me into a lazy (happy) chef … and I HATE to cook, by the way.
Second, I do have a wishlist/suggestion. I currently receive emails with links to multiple ways to download plans. To be completely honest, I don’t think I ever spent more than 3 hours behind my meal plan portal dashboard because receiving the meal plans through the email has been so convenient. When I receive the meal plans through my phone, I use a remote printing app to print them on my home printer and just have my child place it on the refrigerator with magnets. The entire process takes 5 minutes.
On the rare occasion I do find myself behind the dashboard, it would be nice to have the ability to choose my Meal Plan Link preferences.
For example, I ALWAYS use the print-friendly version of the meal plan. That’s it. I don’t ever print the picture version, etc. So, it would be cool to choose an email option to receive only the print-friendly version only.
Not a deal-breaker; just something that would make your already-incredibly-convenient-service more convenient. LOL. (You do see I am trying to push this laziness thing to the max, right?)
Then if you added that functionality, then including a training video on how to do that would be useful.

Thanks for the feedback on the print-friendly PDFs.
Since we switched to the new meal planning format where you can save and edit each plan I’ve stopped including a link in the emails because then you don;t get the full functionality.
I am including the print-friendly PDF link at the bottom of each meal plan on the website so it;s there if you want to use it.
Yay for laziness! I think you’re just being efficient and keeping things simple – exactly how I like to live my life.

I’m working on my shopping list game – easier for me to put things together with iMac, Adjust on iPad and shop with iPhone – it’s a work in progress ? But easier on my first go this week.

Wow!!!! This is amazing! I really love the servings meter that will allow me to choose for one person and have all the ingredients automatically adjusted correctly! Being able to choose between metric and imperial measures is also handy because I kind of work back and forth between them. This is all really cool, and I really appreciate how much time and effort you and your team have put into creating this new format. I’ve been wanting an easier way to search through all the meal plan recipes, and this is it! I also want to be able to search for an item, such as fennel, and have recipes with fennel come up in a list. Super duper excited as I want to get back on track with my cooking.
