MONDAY​​

Big Pea Bowls with Goats Cheese & Olives​

I just love love love the combo of goats cheese and olives. It’s tangy, It’s salty, It’s briny. It’s a flavour explosion.

It’s a brilliant flavour contrast here to the gentle sweet greenness of a big bowl of peas.

One of those insanely simple dinners that packs a flavour punch far greater than you’d think.

TUESDAY​

Lime & Chipotle Chilli Chicken​

Chipotle is especially well suited to bringing a big burst of flavour to good old chicken. Add some zesty lime juice and you have the perfect marinade / sauce.

I love this with drumsticks or chicken wings so you get lots of beautiful bones to gnaw on. But it will be faster, easier and more suitable for polite company if you use boneless chicken thigh fillets.

WEDNESDAY​

​Miso Satay Eggs​

There’s nothing culturally correct about these eggs. There’s Japanese miso (or soy sauce), Indonesian ‘satay’ (read peanut butter) and hot sauce but don’t let that stop you from giving them a go.

I love them with Thai ‘sriracha’ but they’re also amazing with Tabasco and I’m willing to wager that any hot sauce you like will be good here.

THURSDAY

​Balsamic Meatballs with Ricotta​

Recently I was reminded of one of my favourite early Stonesoup recipes – thinly sliced steak seared in a hot pan, seasoned with balsamic vinegar and served on a bed of ricotta cheese. It’s a simple dish but packs the biggest flavour and textural explosion that it’s hard to believe it’s only 5 ingredients.

There’s the hot deeply savoury meat, the sharp sweet dressing mingling with the meat juices and then the cool creamy contrast of ricotta with some rocket (arugula) leaves for freshness and levity.

It’s so good.

So I was inspired to create another version using meatballs.

FRIDAY

Almond Crusted Fish with Hummus & Green Chilli Oil

I love eating fish. But it can be a challenge to get my Irishman to enjoy it as much as I do.

Luckily I’ve found if I pan fry mild flavoured white fish and serve it with lashings of hummus spiked with chilli oil, I don’t get any complaints!

I like to dust my fish in a little almond meal (flour works too) before frying so you get a lovely crust. This adds a beautiful textural contast to the softness of the fish itself. It’s really worth the extra minute of two.
