MONDAY
Addictive Peanut Tofu Scramble
If you’re a peanut butter fan (like me) you are going to LOVE this incredibly simple meal. It comes together in minutes but there’s so much going on with the peanutty goodness and the heat from the sriracha you’ll feel like you’ve gotten an excellent return on your time investment.

TUESDAY
Traditional massaman curry is a slow cooked, rich curry with coconut and peanuts. A real treat.
In this version we’re quickly cooking some steak so we get tender beef without having to wait for hours.
If you wanted extra smoky flavours you could cook your steaks on the BBQ and then slice before tossing into the sauce like my Irishman does, but it’s going to take longer!

WEDNESDAY
I love ground (minced) meat because it’s inexpensive but more importantly it cooks quickly AND all the surface area from the meat being cut so finely means that the flavour permeates your dish much more rapidly than bigger chunks of meat.
Oh and just between you and me…
While the paprika and peppers are essential for making this feel like a goulash, it’s the Worcestershire sauce which magically adds the depth of flavour you’d expect from a much longer cooking time.

Addictive Soy & Sesame Bowl
Full disclosure: I crowd sourced the idea for this recipe.
I got my Joyful Cooking students to vote for the combo of sauce and flavour bomb to serve with this simple chicken and broccoli oven meal. And the winner was this addictive combo of soy & sesame.

FRIDAY
Rosemary Macadamia Salsa Salmon
Rosemary and fish may not be a common flavour pairing. But trust me, it’s seriously delicious.
Especially when you add in some zesty lemon juice and rich crunchy macadamias.
So good!
Actually if you’re not a fish fan, this simple salsa has loads more fish-free uses in the variations below.

SWEET TREAT
Peanut Butter Chocolate Fudge
Fudge isn’t something you’d normally associate with healthy treats. But this version is super special, with no added sugar and hidden ‘fiber’ in the form of oat bran.
