MONDAY​​

​Spinach Okonomiyaki​

Okonomiyaki​ is often described as a Japanese Pancake usually made with cabbage and a flour based batter.

In Japan there are restaurants that actually specialize in this savoury treat.

My humble spinach version makes no claims about replicating the original. So if you’re a purist, better skip ahead to the next recipe.

TUESDAY​

​Creamy Chicken and Spinach ​

Is this the easiest cream sauce in the whole world? Absolutely! Just get some double cream, stir in a little salt and you have the perfect accompaniment for this Creamy Chicken and Spinach.

If you don’t have double cream where you live, you should consider moving to Australia. It’s one of the many reasons I love living here.

Zucchini Parmigiana

Another idea inspired by me playing around with the weekly meal plan recipes.

My Irishman isn’t eating eggplant at the moment because of the FODMAPS situation.

But I really felt like the ​eggplant parmigiana​ in the meal plan.

Hey presto, zucchini parm!

There’s something so magical about the combo of garlic and soy sauce that will have your house smelling sooo good. And if you take the slow cooker option your house will have amazing aromas for the whole day.

​Cauli ‘Sushi’ Bowls​

Seriously, if you are any sort of fan of Japanese food, you have to try these bowls of goodness.

While cauliflower gives them a different texture to your usual rice, I actually prefer it because it’s lighter and less filling which means there is more stomach space for the most delicious parts – the fish and mayo and the seaweed.
