MONDAY
I love this broccoli with a poached egg and some home made mayo for breakkie. But lately, I’ve found myself doubling up for more super tender ‘broc’ with sardines or tuna and lashings of lemon juice for lunch or a simple supper.

TUESDAY
The thing I love about this pie is the unique idea I came up with for the pie ‘crust’. It couldn’t be easier and yet it gives you all that lovely comforting feelings of a good pie.
We’re talking a layer of sesame seeds for the base AND a layer of flavour-explosion pine nuts as the topping.
With the classic combo of spinach and ricotta – once you make it you won’t want to stop either.

WEDNESDAY
It’s hard to go past an omelette when you feel like a super quick, healthy meal. The possibilities are endless when it comes to additions and flavours but my favourite combo is ricotta and Parmesan.

THURSDAY
I’m so glad a bottle of Teriyaki sauce happened to find its way into my shopping cart about 6 months ago.
As a minimalist I’m hesitant to add single use ingredients to my pantry. But after my first night of Teriyaki bliss, I haven’t looked back.

FRIDAY
This may seem too simple to be any good but don’t underestimate the power of a little salt and ground cumin to radically transform your everyday minced (ground) beef.
And if you happen to be feeding little carb lovers like me, let them have some steamed rice while you enjoy the complex comfort of the cauli.

SWEET TREAT
Quick Raspberry Yoghurt Mousse
You know those days when you’re in the mood for ‘something sweet’ but don’t feel like turning on the oven, or waiting very long? Then that’s when you need a quick, light dessert ‘treat’ like these little mousses! I love the tartness of yoghurt but you could always use whipped cream (or a combo of both) if you prefer a creamier treat.
