Indian Spiced Omelette-2

Now that I am lucky enough to have chickens who are laying in abundance, we’re having eggs for dinner at least once a week. Which means I need to keep coming up with new ideas!

This Indian omelette was initially going to be a Moroccan inspired dish. And then I cleaned out my spice box and realized I had lots of Garam Masala which needed using up.

Sometimes the best inspiration comes from asking ‘what do I need to use up?’ rather than what do I feel like…

Indian Spiced Omelette

Total Time 15 minutes
Servings 1 person

Ingredients

  • 1 small onion thinly sliced
  • 1 tablespoon fresh ginger grated
  • 3 eggs
  • 1 teaspoon garam masala or curry powder
  • 1/2 teaspoon ground turmeric optional
  • small bunch coriander (cilantro) leaves and stems chopped

Instructions

  • Preheat a small frying pan or omelette pan on a medium heat. Add some oil and cook onion, stirring every now and then until onion is soft. About 7 minutes. Add ginger and cook for a minute. Remove from the heat.
  • Lightly whisk eggs in a bowl. Add cooked onion and ginger, spices, a pinch of salt and most of the coriander – saving some leaves for serving to make it pretty!
  • Add another few glugs of oil to the pan. Add the egg mixture and gently cook for a few minutes. If the omelette is sizzling too rapidly, turn the heat down. Slowly is the best approach here.
  • When the egg is mostly cooked and set but there is still a little runny egg on the very top, slide the omelette onto your plate, folding in half as you go. The last bit of egg will cook from the residual heat.
  • Serve with reserved coriander leaves scattered over.

WINE MATCH: A crisp dry white like Riesling or Pinot Gris.

Variations & Substitutions

short on time – skip the onion.

different spicing – for a Moroccan vibe skip the turmeric and replace the garam masala / curry powder with 1 teaspoon each ground cumin and ground coriander.

different herbs – mint, chives or basil are also great

more substantial (carb lovers) – serve with warm roti, tortillas, naan bread, toast, pita bread or steamed or fried rice.

more substantial (low carb) – serve with roast cashews, macadamias or peanuts. Or avocaod, some cooked low carb veg – grilled peppers, eggplant and zucchini in Summer or roast cauliflower or cooked greens in Winter.

hot! – serve with chilli oil or chilli salt.

low FODMAP – skip the onion and add chopped chives or sliced green onion (scallion) with the coriander.

cheesey – add some crumbled feta, goats cheese or paneer with the eggs.

carnivore – serve with bacon, salami or proscuitto.

keto / ultra low carb – skip the onion.

Waste Avoidance Strategy

onion – will keep in the pantry for months. Best if in a dark corner in a brown paper bag.

ginger – freeze it.

eggs – will keep in the fridge for weeks or use for another meal.

garam masala / curry powder / ground turmeric – keep them in the pantry.

coriander – best to use for another meal. Can be frozen but will wilt when defrosted.

Problem Solving Guide

bland – more salt or curry powder. Or a squeeze of lemon or lime.

too dry – overcooked eggs. Next time use a lower heat. For now a drizzle of oil or some Greek yoghurt will help.

egg sticking – next time a non stick pan or well seasoned pan will help. For now allow the pan to cool so the eggs release.

too much spice – for now the only option is to serve with some yoghurt or cashew sauce to dilute the spice. Next time use a different brand of curry powder or less all together. And make sure you use fresh ginger not dried powder.

Prepare Ahead

No best when freshly made! Leftovers will keep in the fridge for 2 weeks. Don’t freeze. Eat leftovers cold or at room temp because you don’t want to get rubbery overcooked eggs.

  • When short on time, I do prep ahaid the onions with the spices, so I only have to mix the eggs in and bake at dinnertime. Prepping by slicing onions and baking them saves me just the minutes I need after a busy day.

  • My partner wouldn’t have omelet for dinner so I made the chicken satay curry. He loved it as much as I did first time I tried it.

  • Meal # 10 was the Indian Spiced Omelette and it was delicious ?. My husband grew up in India and he liked the authentic Indian flavor, but it could have more “heat” ?. That’s easily remedied! This will be a favorite quick meal from now on!

  • The whole time we were eating it we were going “Do we like this one? I’m genuinely not sure!” We finished the whole thing though, so something was going alright. haha. I used garam masala this time, next time I’ll try it with the curry powder. We added yogurt on top and some hot sauce – I think next time I’ll saute some onions and bell peppers in with it too, so it has more texture. Great quick recipe, Jules! Thank you!

  • Good lunchtime recipe. My chooks are very grudgingly giving me eggs at the moment, being mid winter, but I scratched enough together to make this today as part of the 10 day challenge. Didn’t have any fresh ginger so added half a teaspoon of dried ginger and it was fine.

  • Recipe 4 of the challenge. Really delicious with curry flavour. I served it with a salad of roasted veg.and tatsoi out the garden. Yoghurt and ginger dressing., another of your recipes. So many of your recipes have become everyday favourites.

  • All I can say is “Yum”! I almost didn’t make this for my day 3 of the challenge, but so happy I tried it.

  • I wish I had paid more attention to what I had on hand for today’s meal. I was short on the spices of the Indian omelette so opted for the Japanese omelette instead. Of course, I didn’t have the miso paste so I just plated it on some hummus instead. I hope that is close enough to give me credit for meal #3!

  • The omelette was a surprise and super easy! Never would have put curry and tumeric in an omelette. Turned out a beautiful color, oozing with onions and I put avocado and sour cream on top along with an extra toss of cilantro. My husband was quite pleased and so was I. So far Jules, I am liking this easy going cooking during the week!

  • Another delicious meal! I made this for dinner last night. I still haven’t mastered the omelette technique and since I doubled the recipe to make dinner for myself and my spouse, I simply scrambled the eggs with all the spices, coriander (I used parsley), and onion. Worked out really well! Served it with some left over roasted potatoes I had from Monday’s meal and yogurt on the side. Excited to make this again for lunch today! I think I’ll serve it with a green salad and toast on the side since we don’t have anymore left over potatoes today.

  • #3 of my 10 Day Challenge. I was going to do Fish with Lime & Miso Butter tonight, but discovered that the frozen fish I had bought needed to be defrosted for 12 hours…

    Double batch for left-overs, in the style of a frittata rather than an omelette proper – 6 eggs, 1 large onion, 5cm knob of ginger plus an extra shake of the ground stuff, 1 heaped tsp each of curry powder and cumin (I always assume that non-Asian recipe writers will skimp on the spice amounts, and my current “curry” powder is very mild anyway). The result was a little like a savoury spice cake, and I had it with Winter Greens and cashews. Interesting. I might have the leftovers with some coconut yogurt.

      Have you seen the bonus on Freezing and Defrosting? There’s a fab new method I have for defrosting under slowly running water – would have had your fish safely defrosted in an hour or so.

  • Made this one tonight. Was nice with some chilli sauce. Might try it with sweet chilli sauce, or something a bit youghurty.

  • I made my first meal for the challenge! I made the Indian Spiced Omelette. One for my sister and one for me. Delicious!
    I may try it next time with a bit of shredded zucchini added.
    I think my daughter will really enjoy trying this recipe as she likes Indian dishes and these spices are perfect!

  • Breakfast today and meal two for me. Oh, so good!
    The only problem was that my pan was not as non-stick as I thought, so it looked a bit less pretty on the plate, but the taste definitely didn’t suffer.
    I love cooking with Indian spices and still have some I brought with me from my travels there. This has inspired me to use them more often.

  • Day 3 for me. A delicious, easy to prepare, light supper. Love the combination of spices! Added some texture with roasted peanuts. I’ll do this one a lot in the future!!

  • Made this for dinner tonight. Loved the spices; had half an avocado and two big spoons-worth of yogurt with it. Will definitely make again.

  • Made this today (I’ve gotten the stars these past 2 days but its back on Zs day for cooking tomorrow :).) I was so hungry this late afternoon, I had with the omelette (along with onion, ginger and curry) a cut-up hot dog! a cup of diced tomatoes, a side of snipped parsley AND shredded fiesta blend cheese. I am so stuffed now.

  • I came home in time to log in to a zoom meeting and then started cooking dinner! I chose the morrocan spices and added a little smoked paprika and some feta left over from Monday night. Years ago I hated coriander but loved adding the whole bunch to this recipe. Another favourite Jules. delicious and quick. another favourite.

  • You gotta be kidding with those spices. Tablespoon of ginger, teaspoon of curry and another half teaspoon of turmeric for three eggs ??!! That was definitely a heartburn special. So much spice in there the eggs were kind of a grainy mess, didn’t even cook up like an omelet.

      • Not dried ginger, wet ground ginger from a plastic squeeze bottle. But my point was more to the amount of garam marsala and tumeric. Way way way to much in my opinion. I use that same combination all the time on my breakfast potatoes, but just a pinch of each. Should have known better.

        • Right – you must have a sensitive palate Wally – my poor old taste buds would hardly register just a pinch. Definitely adjust my spice levels down in the future. Sorry!

  • Day 1 was delicious! Indian Spiced Omelet for lunch. I had 1/2 a leftover jalapeno, so I finely chopped and added that too. I love spicy foods and that was a tasty addition.

  • Oh yum, this sounds like a great variation for an omlette! Adding it to my meal plan challenge, along with chicken and parmesan salad, and sunny parisian carrot bowls, since the rocket is going crazy in my garden. I always have eggs and chicken, so shopping list for the first week is parmesan!
