Creamy Peanut Butter Mousse with Chocolate Chunks

One of my all-time favourite flavour combinations is peanut butter and chocolate. It’s a match made in heaven! This easy little dessert is perfect for those nights when you feel like something sweet but haven’t planned any treats.

Creamy Peanut Butter Mousse with Chocolate Chunks

Total Time 5 minutes
Servings 2 people

Ingredients

  • 1/2 cup Greek yoghurt or whipped cream
  • 1 pinch stevia or icing sugar
  • 2 tablespoons peanut butter
  • 1-2 squares dark chocolate chopped

Instructions

  • Sweeten yoghurt / cream with stevia or sugar as needed, remembering the yoghurt will be quite tart.
  • Layer yoghurt / cream and peanut butter into 2 small glasses, top with chocolate and serve immediately.

Variations

pantry-friendly – yoghurt = coconut cream or cashew yoghurt.

vegan / dairy-free / paleo – use coconut yoghurt or cashew yoghurt.

other flavour ideas– any ripe fruit will work if you mash or puree it first. Other nut butters or chopped roast nuts are also lovely.

nut-free – skip the peanut butter and replace with extra finely chopped chocolate.

more substantial – this makes dainty servings, if you’re hungry you could easily double everything.

Waste Avoidance Strategy

yoghurt – usually has a shelf life of a month or so. Otherwise, have it for another meal like breakfast! Don’t freeze.

cream – unopened cartons will generally keep in the fridge for another week. If you need to store for longer, just pop in the freezer in a sealed container. Or freeze in icecube trays so you can easily defrost just what you need.

pinch stevia or sugar / peanut butter / dark chocolate – keep in the pantry.

  • When I read the mini challenge to comment on the recipe I’d likely make this week, I immediately wanted to respond here. I wasn’t sure the sweet treat would count. Here I am on Friday evening, mixing this dessert and soo happy to see fellow Stonesoupers with the same idea. Family!

    Did make it 😅 Yummy!! Used the whole milk, sweetened yogurt so no sweetener needed. Used a combination of dark chocolate chunks and cocoa nibs. Would love to try chunky PB next time!

  • Omg this sounds to die for. 5 minute prep?!?! I’m sold. Will try making it tonight. I have been eating the Oui yogurts by Yoplait in the USA which are whole milk and yummy/super indulgent. They come in glass jars which seems to elevate the experience and are also reusable. I’m definitely going to try making this in the tiny glass jars!!

    This is ridiculously good! I have been having it regularly and sometimes add golden linseeds for extra goodness and I’ve even been known to drizzle a little cream in too in which case I skip the sweetener (I normally sweeten with a little honey as I’m not a fan of stevia).

    • Good call on the linseeds (for crunch) and the cream Nicola! I had it with some quince jam this week and it was soo good!
