
Chia seeds are a brilliant healthy way to thicken dishes without using flour or heat. If you don’t have chia just serve your fresh blueberries with lightly whipped cream.

Blueberry Chia Pudding
Ingredients
- 4 tablespoons chia seeds
- 1 cup whipping cream
- 1 punnet blueberries 125g / 4oz
- small handful sliced almonds optional
Instructions
- Place chia, cream and blueberries in your food processor. Whizz until you have a smoothish pudding.
- Divide mixture between two small glasses or tea cups. Top with almonds (if using).
Variations
pantry-friendly – serve dark chocolate instead. Or use frozen berries and coconut cream.
nut-free – keep a few blueberries whole and use these to decorate instead of the almond flakes.
dairy-free / paleo – use unsweetened coconut milk or cream.

cream – freeze it or use for another meal.
blueberries – use for another meal or freeze them.
Problem Solving Guide
grainy – the chia seeds will add little lumps – you could use ground chia if you prefer not to. The other cause of graininess is over whipping the cream. Next time whizz for less.
not sweet enough – add a little powdered (icing) sugar or stevia to taste.
too runny – refrigerate for an hour or so to allow the chia to thicken the pudding.
Prep Ahead
Yes. Make puddings as per recipe but don’t add the almonds (if using). Refrigerate for up to 24 hours. Serve chilled.
Serving Suggestions
Lovely in little glasses. Also good with crunchy granola for breakfast.

Hi Jules, How does this work with frozen berries. I often have frozen organic blueberries in my freezer.
Frozen berries will be fab Denise!
You’re going to puree them anyway so it doesn’t matter if they’ve been frozen.

This sounds wonderful, but it seems like an awful lot of calories (I have to watch my calories, because I don’t burn them off like I did when I was young)…
You could easily replace the cream with Greek style yoghurt Susan to keep the calories down. Just puree the blueberries and chia then stir in the yoghurt (if you puree the yoghurt in the food processor it will go all runny).
