Chorizo Chicken with Black Beans

Over the last few years we’ve had an annual date with some friends for a weekend of chorizo and salami making. Our most recent adventure was only a few months ago so my freezer is still bursting with home made chorizo. Definitely not a problem I mind having!

450g (1lb) chicken thigh fillets, sliced
200g (7oz) chorizo, sliced
1 can black beans (400g / 14oz), drained
sour cream, to serve
1 bunch coriander (cilantro), leaves picked

1. Heat a large frying pan on a medium high heat. Add a little oil with the chicken and chorizo. Cook, stirring every few minutes until the chicken is cooked through and the chorizo is browned. 5-10 minutes.

2. Add the beans and stir. Keep cooking until beans are hot. Taste and season with salt.

3. Serve the bean mixture with sour cream on the side and coriander (cilantro) on top.

Variations

different herbs – if you’re not a coriander (cilantro) fan use mint, flat leaf parsley or basil instead. Or replace with washed salad or baby spinach leaves.

vegan / vegetarian – soften a chopped onion in a little oil. Add a few teaspoons smoked paprika and increase the beans to 2 cans. Replace the sour cream with avocado that has been mashed with a little lime juice.

dairy-free – replace the sour cream with avocado that has been mashed with a little lime juice.

more veg – lovely with some chopped avocado on top. Or add chopped cucumber or fresh tomato.

limey
– also lovely with a squeeze of lime.

no chorizo? – replace with any sliced sausages and a little smoked paprika and chilli.

more substantial – serve on a bed of corn chips or toasted tortilla chips or with warm tortillas on the side.

different meat – replace chicken with ground beef (minced), white fish fillets or pork fillets. You could also use chicken breast fillets.

paleo (grain, legume & dairy-free) – replace sour cream with avocado mashed with lime juice. And replace black beans with roast veg.

Waste Avoidance Strategy

chicken thigh fillets / chorizo – freeze them.

black beans
– keep in the pantry.

sour cream
– will keep for weeks in the fridge, can be frozen.

coriander (cilantro) – freeze it in a plastic bag.
