
Chard with Tahini Yoghurt
Chard, Swiss Chard, Rainbow Chard or Silverbeet this leafy green veg goes by many names. It’s not something I used to cook that often until I started buying vibrant rainbow chard from the farmers market. I’ve also discovered it’s really easy to grow your own, so am loving it even more! It can be used pretty much anywhere you’d use spinach or kale.

takes: 15 minutes
1 bunch chard
3-4 tablespoons butter
3 tablespoons tahini
3 tablespoons yoghurt
3 tablespoons lemon juice
handful pine nuts, toasted (optional)
1. Rinse chard and slice stems about 1cm (1/2in) thick and leaves about 2cm (1in) thick.
2. Melt butter in a large pot. Add chard and a splash of water. Cover and cook, stirring every few minutes until the chard is wilted and tender.
3. Meanwhile combine tahini, lemon juice and yoghurt in a bowl. Season.
4. Spread tahini sauce on 2 plates. Top with chard and sprinkle over pine nuts (if using).
Variations
garlicky – add a crushed clove of garlic in with the greens.
vegan / dairy-free – replace the yoghurt with half lemon juice and half water.
more substantial – serve with pita bread, other flat bread, tortillas or cooked quinoa.
nut-free – just skip the pine nuts or replace with crumbled feta or toasted breadcrumbs.
different veg – any leafy green is good like kale, spinach, baby spinach, beet tops or collard greens.
carnivore – serve as a side to a steak, chicken thigh fillets, BBQ or roast chicken, lamb chops or sausages.
paleo (grain, legume & dairy-free) – use olive oil not butter and replace yoghurt with half lemon juice and half water.
more veg – serve with fresh herbs like mint or parsley.
Waste Avoidance Strategy
chard – will keep in the fridge in a plastic bag for at least 2 weeks. Can be frozen both cooked or raw.
butter – keeps in the fridge for months.
tahini / pine nuts – keep in the pantry.
yoghurt – usually has a shelf life of a month or so. Otherwise, have it for another meal like breakfast! Don’t freeze.
lemon – will keep for months in a plastic bag in the fridge.
