Pecan Butter Dates
Recipe by my lovely sister, Naomi Cronan from The Yellow Bench.
makes: 6
takes: 10 minutes
50g (2oz) pecans
6 fresh medjool dates
1. In a food processor or hand held blender, process the pecans until they are a thick paste or as we like to call it Pecan Butter!
2. Slit open the dates on one side and take out the seed
3. Spread the pecan butter inside the date where the seed once was. Serve.
Variations
nut free – skip the pecan butter and just add the cream cheese.
adult friendly – try fresh medjool dates with blue cheese (and don’t forget to offer some to those curious little ones as well as they just might like blue cheese!).
creamy – spread a little cream cheese on the dates before adding the the pecan butter
vegan / dairy-free – skip the cream cheese.
Waste Avoidance Strategy
pecans – pantry
medjool dates – will keep for months in the fridge.

Add to my Old Favourite Recipes
I had a little trouble with the pecan butter, because in my tiny mini cuisinart AND in my vitamix the pecans were just turning to powder. I finally this time (3rd batch) realized I could add just a tiny bit of water and it was must faster. Just thought I would share in case it helps someone else.
Great thanks for sharing Jenna!
Adding a little oil can help speed things up as well
