
White Bean & Parmesan Dip

This puree is a quick and easy starter to serve with warm pita bread or your favourite dipping accompaniment. Feel free to use whichever beans you prefer. Canellini, butter beans, borlotti, or even fava would all work. It is also lovely as a sauce to serve with the super slow roast lamb.
Serves 2
400g can canellini beans (or other white beans)
1-2 cloves garlic
1/3 cup extra virgin olive oil
60g parmesan cheese, finely grated
3-4 tablespoons lemon juice
1. Pop the kettle on to boil.
2. Drain beans in a metal sieve then pour over boiling water to rinse and remove canned taste.
3. Place the drained beans in a food processor with the remaining ingredients and whizz until very smooth. Season to taste.
4. Serve at room temperature with pita or other bread.

Had this in a restaurant instead of butter for bread. Absolutely loved it! Can not wait to try this recipe!
