
Passionfruit Slice

This slice was one of my Mum’s signature dishes. The filling is sweet and rich but rescued from being over the top by the fresh acidic burst from the lemon and passionfruit. It’s actually a pretty simple thing to prepare. The only really tricky thing is cutting biscuits to fit your tin.
I haven’t ever tried it but I’m thinking the filling would also be lovely served in a tart shell with some extra fresh passionfruit drizzled over and a wicked dollop of double cream.
1 pkt (250g or 9oz) morning coffee biscuits or other plain sweet biscuits
400g (14oz) can sweetened condensed milk
1/2 cup (4oz or 120g) melted copha
1/2 cup passionfruit pulp
1/4 cup lemon juice
for the icing:
250g (9oz) icing (powdered) sugar
1 tablespoon butter, melted
4 passionfruit
Line a 20cm (8in) square tin with a layer of biscuits, cutting them to fit your tin.
Place condensed milk in a medium mixing bowl and gradually beat in melted copha, passionfruit pulp and lemon juice. Pour filling over biscuit layer. Top with another layer of biscuits and chill.
For the passionfruit icing combine icing sugar with butter and the pulp of the 4 passionfruit. Add extra boiling water until the desired consistency is achieved.
Spread over the top of the chilled slice and allow to chill for at least another hour to allow the biscuit layers to absorb some of the moisture from the filling and soften.
It’s very rich so cut into small squares to serve.

Thanks for this recipe! We used to love this slice when we were kids. Will make soon. If only I could find Morning Coffee biscuits as they were so lovely and thin, just right for this slice, but I’m sure that I’ll be able to substitute. I made Lattice Slice for my Mother’s 80th birthday recently, similar, yet more like a cheesecake; both very yum.
