
Mum’s Strawberry Dessert

This dessert certainly showcased the perfectly perfumed berries that Mum grew. You have to be a big fan of whipped cream to enjoy it so it’s not a dessert for everyone. We’ve only ever made it with strawberries but I imagine a combination of raspberries or blueberries would also be lovely.
Serves 6
2 punnets strawberries
1 ½ packet marshmallows (white ones only)
2 tablespoons marsala wine or 1 tablespoon balsamic vinegar
300mL (½ pt) thickened cream
1 tablespoon icing (powdered) sugar
Pick out a few good looking berries as a garnish.
Wash strawberries and remove the green tops. Halve strawberries then soak with marshmallows in marsala or balsamic vinegar for at least half an hour.
Whip cream with icing sugar until soft peaks form.
Fold cream through the strawberry mixture and serve in pretty glasses or a large bowl, with the reserved strawberries to decorate the top.
