
Chocolate ‘Ice Magic’
When I was little there was this chocolate sauce called Ice Magic which you poured over ice cream and left to set to give a crunchy chocolate topping. The chocolate flavour was always a bit fake, but we were prepared to overlook that on account of the crunch.
But now I’ve found a solution. A simple chocolate sauce that is 100% chocolatey goodness without any crazy additives. Just the thing for when you feel like an unexpected sweet treat and only have chocolate and ice cream in the house. This is also great served with cakes or puddings.
Serves: 2
Takes: 10 minutes
50g (2oz) best-quality dark chocolate
2 tablespoons boiling water
2 generous scoops vanilla ice cream
1. Break chocolate into small pieces in a heatproof bowl.
2. Pour over boiling water and allow to stand for a few minutes.
3. Stir until chocolate is melted and you have a smooth sauce.
4. Drizzle sauce over ice cream.
Variations
dairy-free/vegan – either use a dairy-free ice cream or try a coconut sorbet.
milk chocolate – feel free to use your favourite milk chocolate if you prefer.
double choc – replace the vanilla ice cream with a chocolate ice cream.
honeycomb – use a honeycomb ice cream or smash your favourite honeycomb chocolate bar and stir into the vanilla ice cream before topping with the melted chocolate.
fruit – serve with these roast pears.
paleo (grain, legume & dairy-free) – serve dark chocolate instead.

Yum! I read somewhere once (here??) that putting coconut oil in with the chocolate will give it the crunch — but I haven’t tried it yet. The honeycomb idea sounds amazing.

Yes coconut oil has a different melting profile to cocoa butter so it will change the texture. But a little goes a long way.
