
‘Caramelized’ Pears

When I was little we had dessert almost every night. It usually involved ice cream; sometimes we’d also have some tinned fruit.
This recipe steps that combination up a notch by warming the fruit under the grill and giving it a bit of instant caramelization with a touch of brown sugar. Yum.
enough for: 2
takes: 10 minutes
4 halves tinned pears
small hunk butter
2 generous scoops vanilla ice cream
2-3 tablespoons brown sugar
1. Preheat an overhead grill (broiler) on its highest setting.
2. Place pears, flat side up, on a baking tray and divide butter between them.
3. Grill the pears for about 5 minutes or until starting to brown on the surface.
4. Divide ice cream between two small bowls. Top with pears and sprinkle with brown sugar.
Variations
dairy-free/vegan – serve with whipped coconut cream or coconut sorbet instead of the ice cream. And replace the butter with a neutral flavoured oil.
short on time? – skip the grilling and the butter and serve at room temperature with the ice cream and brown sugar.
different fruit – lovely with canned peaches or apples.
extra crunch – sprinkle over some roast chopped nuts.
sugar-free / healthier – skip the brown sugar and serve with whipped cream or coconut cream instead of the ice cream.
fresh fruit – halve fresh pears, apples, peaches or nectarines and cook under the grill with the butter (with or without the sugar) until soft and browned on top.
paleo (grain, legume & dairy-free) – serve fresh pears sliced with slices of parmesan or with unsweetened coconut cream or coconut yoghurt. Or coconut ice cream + chopped dates for brown sugar.
Waste Avoidance Strategy
tinned pears, brown sugar – pantry.
butter – will keep in the fridge for months.
vanilla ice cream – keeps in the freezer theoretically for months (seems to never last that long in our house though! ;))
