
Apple Crunch

Every family must have its favourite apple crumble recipe. This is ours.
Another treasure from the early microwave days, the method below is from my Mum’s recipe book. You can make this in a conĀventional oven.
I don’t remember Mum ever really playing around with this recipe but personally, I think a handful of chopped almonds, hazelnuts or macadamias tossed through the crumble topping makes a lovely crunchy addition.
Serves 4-6
4 large cooking apples such as granny smith, peeled and sliced
2 tablespoons lemon juice
for the topping:
1/2 cup brown sugar, tightly packed
75g (2.5 oz) butter
1 cup self raising flour pinch ground ginger
1 teaspoon ground cinnamon
cream, burnt custard,or vanilla icecream, to serve
microwave method:
Place apples in a microwave proof bowl. Sprinkle with lemon juice and microwave on HIGH until tender but slightly crisp. 2 to 4 minutes. Set aside.
Combine remaining ingredients in a small bowl. Microwave 1 1/2 minutes, stir. Microwave another 2 minutes until hot and bubbly. Mix again and spread over apples. Microwave another 4-6 minutes until apples are tender.
conventional method:
Preheat oven to 180C (350F). Combine apples and lemon juice and place in an oven proof dish about 4 cups capacity. Rub together flour and butter and stir though sugar and spices. Spread topĀ ping over the apples, not pressing down too hard.
Bake for 45-55 minutes or until apples are soft and the topping is golden and bubbly. Serve hot with your choice of cream or icecream or both.
