This may seem a little weird at first because it looks a lot like an Italian meat sauce. But the flavour profile is really lovely and quite different!

Best served with some cauliflower rice or steamed rice and something green on the side.

Indian Beef Curry

Ingredients

  • 450 g minced (ground) beef
  • 1-2 teaspoons dried chilli flakes
  • 2 tablespoons garam marsala
  • 1 can coconut milk 275g / 10oz
  • 3-4 tablespoons tomato paste

Instructions

  • Heat a large fry pan or skillet on a high heat. Add a few tablespoons of oil and the beef. Stir fry beef for a few minutes.
  • Add chilli and garam marsala and continue to cook beef, stirring occasionally until really well browned.
  • Add coconut milk and tomato paste and reduce heat to a simmer.
  • Cook stirring occasionally for about 5 minutes or until the sauce is hot and reduced slightly.
  • Taste and season, adding a little more chilli if you think it needs it. Serve.

Excellent! Will keep in the fridge for a week or so.

Variations for fun

vegan / vegetarian – A chickpea curry would be a wonderful veggie alternative. 2 cans of drained chickpeas should do the trick.

beef chunks – if you find the how gound beef curry a little weird. Feel free to use some diced beef fillet or other tender cut. Brown it well in the pan then remove from the pan while you cook the sauce before returning to the pan to cook.

chicken curry – try it with ground chicken.

beef burning – the heat is probably too high, or you haven’t been stirring often enough. Reduce the heat quickly and give it a good vigorous stir. A little more oil may help.

bitter flavours – if the garam marsala gets burned this can add bitter flavours to the curry. A little sugar to season can mask this but if it’s too prominent, you may need to start again.

can’t find garam marsala? – replace with your favourite curry powder or try making your own spice blend.

too watery? – cook it down for a little longer if it seems too watery. Next time try a more creamy (read expensive!) brand of coconut milk.

too bland?
Season with salt and pepper. If the curry flavour isn’t pronounced enough,

serving suggestions

This one needs some sides!

Steamed rice or cauliflower rice is a must. Then something salady or vegetabley would make for a complete meal. Steamed broccoli or green peas would be my pick. Although a shaved cabbage salad might be nice for some crunch.
