5 Ingredient Cranberry Sauce

I’ve been perfecting my cranberry sauce / gravy over the years. This version is so much easier to make than gravy and you won’t have to worry about things going lumpy.

For vegetarians use vegetable stock and don’t add the turkey juices at the end.


This makes a wonderful spread for turkey sandwiches so don’t be afraid of making too much. Will keep for a few weeks in the fridge.

5 Ingredient Cranberry Sauce

Total Time 30 minutes
Servings 18 people

Ingredients

  • 2 cups chicken or vegetable stock
  • 1 medium jar commercial cranberry sauce approx 275g/ 10oz
  • 300 g sweetened dried cranberries (craisins) (11oz)
  • 2-4 tablespoons worcestershire sauce or soy sauce

Instructions

  • Place all ingredients in a large saucepan.
  • Bring to a boil then reduce the heat. Simmer for 15 – 20 minutes or until thickened and the cranberries are tender.
  • Add turkey/chicken cooking juices, (if using, this is optional) and bring back to a simmer.
  • Taste and season with a little more sugar and or sauce and serve warm or at room temperature.

Quantities for Different Serving Sizes

This recipe can easily be increased or decreased to suit your number of guests. The cooking times will be about the same.
Serves 8 – 10
1 cup chicken or vegetable stock
1/2 medium jar commercial cranberry sauce
150g (5oz) sweetened dried cranberries (craisins)
1 – 2 tablespoons Worcestershire sauce or soy sauce

Quantities for Different Serving Sizes

This recipe can easily be increased or decreased to suit your number of guests. The cooking times will be about the same.
Serves 4
1/2 cup chicken or vegetable stock
1/4 medium jar commercial cranberry sauce
75g (2.5oz) sweetened dried cranberries (craisins)
3-4 teaspoons Worcestershire sauce or soy sauce

Variations

vegetarian / vegan – use vegetable stock and soy sauce (Worcestershire contains anchovy) and DON’T add the turkey cooking juices, or separate out a vegetarian batch of sauce and add the turkey juices to the remainder .

paleo: (grain, legume & dairy-free) – use 3-4 pitted dates instead of brown sugar.

All ingredients can be keep in the pantry.

Problem Solving Guide

cranberries not soft – it can take a little while for the dried cranberries to absorb the stock and soften, just simmer for longer.

too sweet – next time skip the brown sugar. For now, add a little salt or more soy sauce to counter the sweetness.

bland – season with more soy sauce or Worcestershire.

prefer to use fresh cranberries – unfortunately they’re really difficult to get in Australia so I haven’t been able to try this. But substitute double the amount of fresh for the dried cranberries and expect to simmer for at least an hour. You’ll probably need quite a bit more brown sugar as well.

Leftover Potential

Excellent. As I mentioned above – a key ingredient for the worlds best leftover turkey sandwiches.
