MONDAY
I just can’t get enough of this coleslaw mix roasted with salmon, soy and maple.
I just love how the sweet salty sauce cooks down with the cabbage and carrot to make the most delicious vegetable experience.
Think comforting like a big bowl of udon noodles but a million times more flavoursome (and a million times better for you). This is one comfort food that won’t leave you feeling heavy like you’re wearing a lead blanket afterwards.

Chicken with Sun-Dried Tomato & Feta Salsa
My deli stocks both sun dried tomatoes and semi-dried.
I prefer the semi-dried option because they tend to be sweeter and less leathery. But either will suffice.
And yes I am bashing out the chicken, which could seem fiddly.

WEDNESDAY
Flavour Explosion Scrambled Eggs
Have you ever thought that scrambled eggs are just for breakfast? Well I used to be the same.
Then one day I was thinking how much the texture of scrambled eggs was like an oozy risotto. But so much more nutritious. And it got me thinking about the flavour possibilities for the humble egg scramble.
When you have bacon, parmesan and onion you can’t help but have a flavour explosion situation on your hands.

THURSDAY
I’m super excited about these burgers. At last a vegetarian burger that celebrates one of my favourite veggies. The yoghurt sauce is super simple and a great thing to have up your sleeve. It’s amazing what a little salt and pepper can do to a good quality natural yoghurt.

FRIDAY
Mushroom, Sausage + Feta Hash
This is one of those fab little one pot meals that is equally welcome on an ordinary Wednesday night as it is for Sunday bunch. So much flavour!
The cumin seeds add beautiful depth. The dill is my preference for herb because it adds an unusual fresh top notes.
Just the thing to contrast earthy mushrooms and meaty sausages.
There’s balsamic which brings sweetness and acid brightness.

SWEET TREAT
No-Churn Cherry & Chocolate Ice Cream
Ice cream is one of my favourite favourite things to eat but since I’ve been diabetic, it’s not something I have very often. When I do my favourite is to make an ‘ice cream’ by blending frozen fruit in the food processor with cream. You end up with this really creamy soft dessert that doesn’t leave you with a sugar hangover. So good!
