​MONDAY​

Zucchini Pizza​​

As much as I love my ​Cauliflower Pizza​, there was one big problem with it.

Even after resolving all his IBS issues, my Irishman still has a big reaction to the humble cauli. No fun.

Then one day I was dreaming about cauliflower pizza and inspiration stuck. Why not zucchini?

Yes it would be green, but surely the texture would work.

And I was right! In fact in many ways I like this even better than the cauliflower original.

TUESDAY

​Slow Mapo Tofu​​

This is one of my favourite things to eat now. Deeply savoury ground pork (mince) slow cooked until melting with a big chunk of comforting tofu. Green beans for freshness and a little Sriracha for the chilli kick. Cashews for crunch.

We’re talking all good things.

Mexican Omelette with Smashed Avo​​

Avocado on toast used to be one of my favourite things to eat before I got into the whole low carb thing.

Recently I’ve been having a bit of an avocado renaissance and was inspired one night to try it smashed onto an omelette for a quick solo dinner.

Talk about a winner.

THURSDAY

Chicken & Green Bean Stir Fry ​​

I still remember the first time I went to a Thai restaurant. I ordered the chicken and cashew nuts because it sounded intriguing.

I was blown away by the flavour. The texture. The umami savory deliciousness.

I wanted more.

All these years later I’m still playing around with that classic combo.

FRIDAY

​Salmon with Asparagus and Dill Mayo​​

Salmon can be very oily, which is great because it’s difficult to over-cook and dry it out. But it can feel a little too rich. This method of cutting the fish into thin scallops or ‘minute’ steaks means more surface area in contact with the pan, so more chance for the oil to cook out and leave you with lovely crispy bits. Sea trout is very similar to salmon and I often use them interchangeably, depending on which looks best at the fish market.
