In late Summer my favourite, favourite indulgence is fresh figs, preferably black figs, however I’m happy with them in any form!

Fresh Figs + Cream
Ingredients
- 4 super ripe figs
- fresh cream preferably double cream!
Instructions
- Wash figs and quarter, lengthwise. Arrange in 2 pretty bowls. Serve with cream passed separately for everyone to add their own.
Variations
dairy-free – serve with coconut cream, cashew cream (soak cashews in water for 6 hours, drain and whizz in a high powered blender until smooth), coconut yoghurt or a dollop of almond butter.
more decadent – serve with vanilla ice cream, or a drizzle of honey / maple syrup or some grated dark chocolate.
crunchy – serve with toasted nuts such as sliced almonds or chopped pistachios or cashews.
other flavours – try a sprinkle of cinnamon, some ground cardamom (a little goes a long way), or a splash of vanilla extract.
paleo (grain, legume & dairy-free) – use coconut cream, coconut yoghurt or sorbet.
no fresh figs – you could use dried figs and soak them in boiling water for 10 minutes. They won’t be as pretty but are still delicious!
Waste Avoidance Strategy
figs – freeze them.
fresh cream – will keep in the fridge for a few weeks. You can freeze.
