Lemony Snow Peas with Fish

This year I’ve been trying to eat more fish because we finally have access to super fresh (and inexpensive!) fish at our local farmers market. I love this light, fresh combo on a Monday night after a weekend of a little too much indulgence. Preserved lemon is easy to make. See the recipe here.

2 handfuls snow peas, trimmed
1 lemon or 1/4 preserved lemon
2 fish fillets
1 lemon, halved, to serve

1. Bring a small pot of water to the boil. Add snow peas and simmer for 2 minutes or until bright green and still a little crunchy.

2. If using fresh lemon, grate the zest using a fine grater and juice the lemon (you want 2-3 tablespoons juice). Combine juice and zest with 3 tablespoons extra virgin olive oil. Taste and season with lots of salt.

3. If using preserved lemon, finely chop the rind and pulp, discarding any seeds. Combine chopped preserved lemon with 3 tablespoons extra virgin olive oil. No need to season as the preserved lemon is super salty.

4. Rub fish with oil and season with a little salt. Cook in a frying pan on a medium high heat for 3-4 minutes on each side or until the fish flakes when you touch it.

5. Serve fish topped with the lemony snow peas and lemon halves on the side.

Variations

vegetarian – replace fish with fried eggs or sliced halloumi cheese. Pan fry until golden on both sides.

vegan – serve lemony snow peas with chunks of avocado and roasted nuts. Or toss snow peas in with cooked grains such as brown rice, quinoa or farro.

carnivore – chicken breast or thigh fillets. Also good with a pork chop or pork sausage.

no preserved lemon – use the zest of one lemon. You can buy them from delis or fancy food store or order online. Or it’s really easy and much much cheaper to make your own.

more saucey – serve with garlicky mayo.

different veg – broccoli, asparagus, sugar snap peas, green beans, frozen peas. Adjust cooking time as needed.

more substantial (carb lovers) – serve with spuds (roast, steamed or mash), other roast root veg or serve with rice noodles.

more substantial (low carb) – add some smashed avocado.

keto / ultra low carb – replace snow peas with baby spinach.

Waste Avoidance Strategy

snow peas – use for another meal or you can freeze them.

preserved lemon – unopened keep in the pantry, once opened you’ll need to keep them in the fridge.

fish fillets – freeze them.

lemon
– whole lemon will keep wrapped in a plastic bag in the fridge for months.
