Tasty Cheese Sauce

This cheese sauce is a bit of a linchpin for a few of my family’s favourites, namely my Mum’s lasagna and these tartlets. I also loved when Mum served boiled cauliflower slathered generously with this sauce. It always amazed me just how tasty it could make such a boring vegetable.
It’s funny but I could never get my cheese sauce to taste the same as Mum’s. It wasn’t until I was testing this recipe and actually used old school cheese singles that it came close to my childhood memory. An example of why sometimes it is better to actually follow the recipe.
Makes approx 2 cups
2 tablespoons butter
2 tablespoons plain flour
pinch salt
pinch dry mustard
1 ½ cups milk
125g (4 ½ oz) processed cheddar cheese slices or cheddar
Melt butter in a medium saucepan. Add flour, salt and mustard. Cook for a few minutes.
Gradually add milk and continue cooking and stirring constantly over a medium heat until sauce thickens.
Remove from the heat. Add cheese and stir until it melts.
