
Crunchy Bread Pudding

Bread and butter pudding is one of my all-time favourite winter desserts. So I challenged myself to come up with a 10-minute version. I’ve served them with cream here, but they would be even better with melting vanilla ice cream.
I love that this recipe only makes two servings. No need to worry about evil, tempting left-over dessert in the morning. Yay. Having said that, it should be fine to double the recipe if needed, but any more than that and you’ll probably struggle to fit everything under the grill.
Serves 2
60g (2oz) caster sugar
125mL (1/2 cup) whipping cream
1 egg
2 thick slices bread, cut into cubes
cream or ice cream, to serve
1. Preheat your overhead grill to its hottest.
2. Combine sugar, cream and egg in a small bowl.
3. Squash bread cubes into the egg mixture to soak up as much as possible.
4. Place everything on a foil-lined tray and cook under the grill for 5 minutes.
5. Turn and cook the other side of the bread for another 3 minutes or until golden-brown.
6. Divide between two small bowls and serve with cream or ice cream.
Variations
dairy-free/vegan – use coconut cream and a splash of vanilla extract instead of the whipping cream and egg.
gluten-free – choose a gluten-free bread.
cinnamon – add a 1/2 teaspoon ground cinnamon to the sugar-egg mixture.
egg-free – replace the cream, sugar and egg with a commercial egg-free custard.
more summery – refrigerate puddings and serve chilled.
gluten-free / paleo / low carb – serve fresh fruit and coconut cream.
Waste Avoidance Strategy
caster sugar – keep in the pantry.
whipping cream – freeze it or use for another meal.
egg – will keep in the fridge for weeks or use for another meal.
bread – freeze.
ice cream – will keep in the freezer for months.

Super yummy! As a note, the 60 g/2 oz of caster sugar is a bit over 1/4 cup granulated sugar, for us Americans 😉 I used 3 regular slices of bread. I added the dash of cinnamon, and kind of cheated cooking this — I stirred the bread mixture until it was somewhat smooth, and cooked it in a buttery pan like a pancake (a huge, gooey, falling apart pancake 😀 ). Drenched it some of the remaining whipping cream. Amazing!
