
Chocolate Butter Frosting

I think each of my siblings and I had this icing on our first birthday cakes. There are almost identical photos of each of us sitting in the high chair with a party hat on and cake and frosting smeared all over our faces. Priceless.
The cake in the photo opposite was actually made, iced and decorated by my sister Naomi who doesn’t like chocolate. When she was little she used to keep all her Easter eggs under her bed for months until one of us found her stash and ate them. Thanks Nao. I can’t help but wonder if it was seeing photos of herself on her first birthday with this frosting all over the place that started her chaco phobia?
120g (4oz) butter
240g (8oz) icing sugar
1 tablespoon cocoa powder, heaped
1 tablespoon milk
Cream butter in an electric mixer.
Gradually beat in icing sugar sifted together with the cocoa.
Add milk and beat at high speed until light and fluffy.
Make sure your cake is properly cooled. Spread the frosting over using the knife to make pretty swirls.
Note:For a non chocolate frosting, just omit the cocoa powder and replace with your choice of food colouring.
