2 handfuls salad leaves
250g (1/2lb) tomatillos or cherry tomatoes
1 green bell pepper (capsicum)
1 red bell pepper (capsicum)
4 summer squash or 2 zucchini

pantry / dried goods:
1 can lentils*
2 cans tomatoes (400g / 14oz)
8-10 slices grilled eggplant from the deli
75g (3oz) almond meal*
2 teaspoons sesame oil
3 tablespoons soy sauce
tomato paste or ketchup
1 tablespoon fish sauce
sherry or rice vinegar
white vinegar
balsamic vinegar
dried chilli
cajin spice mix

meat/fish/eggs:
500g (1lb) minced (ground) chicken**
500g (1lb) minced (ground) pork**
1 egg* + 2 eggs
300g firm tofu*

chilled goods:
5-6 small bocconcini balls
parmesan cheese
