I’m a big fan of all food but vegetables hold a special place in my heart, particularly now I’ve started growing my own in my little back yard veggie patch.
Last year I decided to go vegetarian for a month to expand my horizons and take the chance to really explore the world of vegetables as a main course.
While I really enjoyed what I ate that month, I found myself missing my bacon. So this year I’ve adopted a more moderate approach to vegetarianism by going meatless on Mondays.
The thing is, it can be easy to make delicious vegetarian meals, without spending hours chopping and preparing. It just takes a little creativity approaching meal planning with vegetables in the front of your mind.
