[RYW] Bonus Lesson #11. Slow Carb Picnic Lunch Ideas

When I was little one of my favourite things was when Mum and Dad would decide to go for a family picnic.

It tended to be when the weather was fine but not too hot. We’d all pitch in to get things ready. The picnic blankets would come out, along with our old battered picnic basket and Mum would make sandwiches.

Always sandwiches. Cut on the diagonal. With brown bread. So good.

So when Beth contacted me to request some Slow Carb picnic ideas, I knew exactly where she was coming from.

The good news is there are plenty of wonderful dishes that work just as well.

We’re looking for things that don’t need constant refrigeration. Or heating up. Things that can survive and even taste better after being shaken up a bit.

Slow Carb Portable Lunch Ideas

salads:
Think more robust salads that don’t have delicate leaves.
tomato, almond & pesto salad
mixed sprout & avocado salad
lentil & beetroot salad
chickpea salad with lemon, olive oil & parsley leaves
avocado & mixed bean salad
ham & tomato salad

takeaway chicken & butter bean salad
warm salad of peas & lentils – lovely at room temperature too

soups:
Just invest in a thermos to keep them warm.
creamy cauliflower soup
white bean & tomato soup
simple carrot soup
spiced lentil soup – keep the yoghurt in a separate container and add just before serving
chickpea & spinach soup
quick veggie soup

other:
baked zucchini frittata
white bean & eggplant soup
home baked beans – keep them warm or at room temperature.
curried scrambled tofu – just as lovely at room temperature
-deli treats – stock up on proscuitto, salami, marinated veg, and dips to make a picnic antipasto platter
-mezze – chop up some carrots and celery and load up with hummus and other middle eastern dips + felafels

leftovers:
– I love a good leftover picnic. Just choose things that are fine at room temp rather than needing to be heated up.
