prepare ahead?
It really needs an hour or so to firm up in the fridge. But you could make it up to a week before you need it.
variations for fun
chunky slice – add a large handful of chopped roasted peanuts to the fudge mixture.
dark chocolate – for a more adult version, replace milk chocolate with some serious good quality dark chocolate (at least 70% cocoa solids)
dairy free – replace butter with melted coconut oil or copha.
vegan – use coconut oil or copha instead of butter and use dark chocolate instead of the milk.
troubleshooting guide
icing sugar lumpy – if it’s really bad, blitz in the food processor before using OR pass through a sieve. But generally a bit of brisk mixing with the melted butter will work out any lumps
chocolate not melted – if your butter isn’t hot enough, the chocolate won’t melt. If this happens, put back on a low heat for a few seconds and stir and repeat until all the chocolate lumps are gone. Alternatively, melt the chocolate and butter in the microwave.
chocolate splits or curdles – this means the butter was too hot. Try and rescue by pouring the chocolate mixture into a clean cold bowl and quickly mixing in a few tablespoons of cold milk or cream. If that doesn’t work, try adding an egg yolk.
chocolate dull – one of the downsides to putting the mixture in the fridge to set is that the coldness makes the chocolate loose its shine. It still tastes divine so try not to worry.
too sweet – for those who prefer things a little less sweet, serve with some sea salt flakes on top or reduce the amount of sugar by about a quarter and replace with more peanut butter.

peanut butter slice recipe
makes 16-20 squares
100g (3.5oz) butter, melted
100g (3.5oz) icing (powdered) sugar
100g (3.5oz) peanut butter
100g (3.5oz) milk chocolate
1. Melt the butter in a small saucepan or microwave. Roughly line a small square or rectangular baking tin with baking or parchment paper.
2. Combine sugar, peanut butter and half (50g / 1.7oz) the melted butter in a small bowl. Stir vigorously until there are no more sugar lumps.
3. Meanwhile, break chocolate into small chunks and add to the remaining butter to melt the chocolate.
4. Spoon the mixture into your prepared pan. And try and flatten evenly.
5. When the chocolate has melted, stir to combine with the butter, then layer over the peanut butter fudge. Cool and refrigerate until firm. Cut into tiny squares.
