The flavour of the cabbage can become stronger as it sits in the dressing. I like it but some may not. I happily keep in the fridge for a few days.
One of the things I love about this is that cabbage keeps happily in the fridge for weeks so you always have the makings of a fresh crunchy salad at your finger tips.
variations for dietary requirements & fun
carnivore – Replace salmon with proscuitto or pancetta.
fish free /vegan – Replace salmon with a drained can of white beans and/or a handful of toasted almonds.
vegetarian – Replace salmon with shaved parmesan cheese (not strictly slow carb but delicious)
fun – toss in a few sprigs or parsley for extra colour.
troubleshooting guide
too bland – Season with salt & pepper and lemon juice.
too dry – Stir in a few tablespoons of extra virgin olive oil.
hard to eat – The secret to this salad is getting the cabbage sliced as finely as possible. If you have a mandoline please use that, otherwise use your sharpest knife and your steadiest hand.
serving suggestions
Great on its own.
Or wonderful as a side salad with our without the salmon.
leftover potential
OK texturally, but for some the cabbagey flavour will increase as it sits in the dressing. I like it but others may find it a bit strong.

shaved cabbage salad with smoked salmon recipe
serves 2
2 tablespoons lemon juice
2 pinches fennel seeds, optional
1/4 large white cabbage
200g (7oz) smoked salmon, sliced
1. Combine lemon juice, fennel seeds (if using) and 2 tablespoons extra virgin olive oil in a large bowl. Season.
2. Slice cabbage as finely as possible and toss in the dressing.
3. Divide salad between 2 plates and layer over the smoked salmon.
